Slow Cooker Taco Soup

I wouldn't even bother with the slow cooker. Twenty minutes and this recipe is ready to eat. I've made it a couple of times already and we love it. It's one of those go to meals when time is short. I serve this with crackers and mustard because to our family, it taste just like chili.

Brazilian Black Bean Stew

Wow - I don't know what else to say to this recipe! It is fabulous. I was unsure about mango, chorizo, and sweet potatoes together, but it works! I cut the fat in this stew way down by using vegetarian chorizo. I'm certainly glad I found this recipe...it will be a regular meal in our home.

Bread Machine Bagels

I'm rating this with only four stars because three hours for 9 bagels was a bit much. I used 1 1/2 cups whole wheat flour, and 1 1/2 cup unbleached white flour. On the plus side, they were delicious. I may do them again, but it won't be a recipe I use very much.

Honey Wheat Bread II

I just received a bread machine from my neighbor. This was the first recipe I used in it. The bread turned out gorgeous and delicious. Because my neighbor gave it to me, I also gave her some of the first loaf and she loved it too.

Coconut Cream Pie II

Made this for Thanksgiving Dinner - a wonderful addition to the dinner. I will make it again. Love the vanilla wafer crust. I didn't have any gelatin and used corn starch instead and it worked fine except was a little runny. But it was tasty enough that I'll definitely make it again.

Sour Cream Pumpkin Bundt Cake

A friend made this for our chuch's Thanksgiving Dinner. I then asked her for the recipe and she sent a link to this recipe. Absolutely scrumptious. My whole family lapped it right up. Definitely a keeper.

Pear Honey

I tried to do this, but instead of cooking on the stove, I used my crockpot. Horrid results. The pears never did break down (and they were very ripe) and the juice did not thicken up at all. I had to throw the entire batch out. I guess I should have cooked it on the stove per the directions given. Oh well, lesson learned. Hated it though that I wasted so many pears!

Orange Cream Fruit Salad

So Yummy! I needed a "salad" for a ladies get together at my church. I am not a big "salad" person so I went to allrecipes to find something to make. This caught my eye. It's really a dessert! But is so full of fruit that it has to be good for you - right?! I will definitely be making this one again.

Fresh Pear Cake

My in-laws gave me a whole sack of pears so I started looking for recipes to use them up. This is the first recipe I've tried and we loved it. This is a great holiday cake. I'm going to make a couple more and freeze them for later on.

Banana Banana Bread

My family loved this bread. They ate almost the whole loaf in one setting. I used whole wheat flour instead of white flour and to me it was a little dry. But I'm the only one in my family of 6 that thought that, so I will definitely make this again.

Delicious Black Bean Burritos

We had these this past week for the first time and they were excellent. But I did change up the recipe quite a bit. We cooked dried black beans (2 lbs - since we have a family of 6) I then added 8 oz cream cheeze, and a can of rotel tomatoes along with our favorite spces - cumin, garlic, chili pepper, salt and pepper. I blended this in the mixer and then made them into burritos. My family absolutely loved these and we now have a new burrito recipe.

Chicken Quesadillas and Fiesta Rice

My kids loved this, but it was a little too salty for my taste. I should have used fresh/frozen chicken breast but instead used can chicken. With the can chicken and the can soup, the salt content was a little high. Also, I added beans to make these go further. I will make these again, but I will not use can chicken.

Poblano Chicken Enchilada Casserole

Scrumptious! My family was scraping the bottom of the dish to get the very last bite. I did cut back on the jalepeno's though because not everyone in my family likes their food that spicy. I'll definitely be using this one again.

Pumpkin Chocolate Chip Cookies III

I read the reviews before I baked these and decided to bake it as a cake. It is better if you use only 3/4 cup of chocolate chips, 1 tsp cinnamon, 1 tsp nutmeg, 1/2 tsp cloves. There is no way these would have turned out as cookies for me. I'm glad I cooked it as a cake. To me it's like pumpkin bread with chocolate mixed in. I baked it at 350 for about 20 minutes. Very yummy. Would make great holiday gifts for family and friends.
