Sweet Potato Pie VII

Excellent! I made this instead of pumpkin pie for Thanksgiving and it turned out great. I made it according to the recipe but used Ideal sugar substitute (diabetic in the family) and added 1/2 tsp of cinnamon and nutmeg. I also baked the potatoes in the oven....left in foil to cool off and the skins literally fell off! Liked that the recipe gave a definitive measurement for the potatoes. This will be a keeper for next year.

Zucchini Brownies

These were surprisingly good. I halved the recipe...and baked for 25 minutes in a 9X9 pan (next time I'll use an 8x8) Basically made the recipe as written, however I pureed the zucchini and used a mixture of oil and applesauce (mixed together in a 1/4 measuring cup. I put a little of that mixture in the food processor to help with the puree....you'd never know there was any zucchini in them. They tasted better the next day and are very moist....definitely a keeper!

Microwave Lemon Curd

This was very tasty and easy to make. I use a teaspoon+ to flavor my plain greek yogurt in the morning and the local grocery store stopped selling the brand I liked....so I was looking for an alternative. I made as directed but dropped the the recipe down to 5 servings ( checked and stirred every 30 seconds due to the smaller amt.) This is definitely a keeper! Thanks.

Lentil and Sausage Soup

This actually surprised me how good this was and comparable to Carraba's....I used hot Italian chicken sausage from Trader Joe's...it gave it the same flavor...but I had more or less sausage "discs" vs..crumbled sausage. Will make with a different sausage next time...but either way unbelievabley tasty. My husband said "you can make this anytime"....and I will!

Shrimp Lemon Pepper Linguini

My husband and I really liked this...will make again as it had a lot of flavor. I didn't have any chicken broth in the house so used water instead and added a little cornstarch in the broth to thicken it up a bit. Also added cherry tomatoes and spinach for some veggies.

MMMMM... Brownies

Easy and perfect as written. I mixed the whole the whole recipe in my saucepan...no extra mixing bowls needed. They came out chewy, yummy....perfect! This is a keeper!

Blackberry Pie III

I've made this recipe quite a few times and it always turns out spectacular. The pie never seems to last more than a day..two at the most and it's only me and my husband. We can't stop eating it. I usually eyeball the ingredients(adding a little more flour if the berries are fresh and extra juicy) I also use Splenda instead of sugar. I've always used the Pillsbury pie dough (very easy) and the only thing I do differently is to wash the top with a little half and half and sprinkle with brown sugar (a little more that a tsp) over the top crust. I've also used a mixture of frozen berries (sometimes assorted) with fresh if I come up short on the amount needed to fill the pie tin. Always turns out perfect! This is a keeper!
