I've been making this recipe once in a while for 9 years now. It is a major hit every time I bring it out. The balance between the saltiness of the soy sauce, the sweetness of the honey, and the acidity of the cider vinegar really brings a wonderful flavour to this dish.
The one thing I do that isn't in the recipe is to add thick slices of red onion to the chicken and mushroom mix in the marinade, and then thread those onto the skewers along with everything else. It adds a nice extra touch of extra colour and texture on the skewers and also complements the existing flavours well.
