Mexican Corn

So yummy! I slightly modified to use up what I had on hand. Used white/yellow niblets, 1 rounded tbsp of margarine, light cream cheese & 4-5 tbsp. of jarred sliced jalapenos (diced). It was definitely spicy, but we loved it. I'd say reduce peppers by half if you are worried about the heat. You can always add more!

Cheesy Ranch Potato Bake

I mostly followed the recipe & took a few tips from the reviews. I reduced by half for our family size & used a 2 lb. bag of baby red potatoes because that was what I had on hand. I combined the dry seasonings in a small bowl, put the cubed potatoes in a ziploc & poured 2 tbsp. of melted butter on potatoes then added the seasoning mix. Much easier to make sure everything is coated that way. I also did follow the suggestion & substitute seasoned salt for regular. This recipe was very simple to make & flavorful. Thanks for sharing it!

Japanese-Style Sesame Green Beans

What a wonderful, flavorful recipe for green beans. It adds just enough flavor without overpowering the beans. We also like to make this with fresh asparagus - yum! Thanks for sharing this recipe!

Strawberry Spinach Salad I

What a lovely, refreshing salad! The combination of sweet & savory is lovely. I mostly followed the recipe as written except I used red onion, rice wine vinegar (my husband has an aversion to regular vinegar) & light brown sugar because I accidently grabbed the wrong ingredient. Love the dressing! This would be great to take to a party or pair with grilled chicken or fish. Thanks!

Asparagus Parmesan

Great way to make asparagus. I reduced the olive oil to 2 tbsp. & that was plenty. You also may want to wait to salt it because the butter & cheese does add quite a bit of salt on it's own. Thanks for the great recipe.

Chicken Tikka Masala

We've never had chicken tikka masala before, so I can't speak for the authenticity of it but we loved the dish. We followed as written with the exception of the salt & followed other reviewers suggestions of 1 tsp. on the marinade & 1/2 tsp. on the sauce. We served it over rice with grilled naan on the side - yum! Thanks for the recipe!

Smothered Green Beans

This is a great recipe for green beans! I followed other reviewers & removed the bacon before adding the beans & liquid. I also used beef stock instead of water then added the bacon back at the end. I made it for the first time 2 nights before Thanksgiving & it was so good we had to add it to the Thanksgiving menu! That time I used chicken stock & it was just as good. This recipe is definately added to our regular rotation & would probably work great with asparagus too. THANKS!

Ronaldo's Beef Carnitas

I doubled the seasonings & cooked in the crockpot for 8 hours on low. Came out perfect - moist & flavorful but not overly spicy. My husband raved about it after the first bite & said "you've got to make this again soon!" So this is definately being added to our rotation. Great filling for tacos, burritos, enchiladas or chimichangas. Next time I might try it with a pork roast since that is the more traditional meat for carnitas. Also I will use a bigger roast & freeze extras for quick dinners in the future. Thanks!

Rempel Family Meatloaf

What a great meatloaf! It was very moist & flavorful. I used a 1-1/4 lb. package of meatloaf mix (2/3 beef & 1/3 pork)from Safeway. I added all the other ingredients per the recipe except the onion soup. I was worried about the saltiness per the other reviews, so I left out a little of the powdered portion of the soup mix. It was perfect. I thought the cheese mixed throughout was really good but didn't overpower it with a "cheesy" taste. Thanks Rempel Family!

Three Cheese Garlic Scalloped Potatoes

This recipe has wonderful flavors! The first time I made it I found it to be a bit runny, so now I make it with half the cream it calls for. I have also substituted minced garlic for the sliced & it comes out just as good. Every time I have made it for guests they ask for the recipe. Thanks for sharing!

Kalua Pig in a Slow Cooker

This was my first kalua pork so I cannot speak to the authenticity of this recipe. I used a 3 lb. roast & adjusted the ingredients accordingly. It cooked up perfectly in 10 hours. I was leary of the smoke/salt being overpowering based on some of the other reviews, but the actual roast was very simple tasting. Maybe it was because I didn't add any of the drippings. The recipe said add if needed to moisten, but the roast was plenty moist on it's own. I think this is a good basic recipe that could easy be expanded on or used to make other items (shredded BBQ sandwiches or pork burritos maybe?). Thanks.

Bronco Burger

The ingredients give these burgers a wonderful flavor. I followed the recipe except I made smaller (1/4 lb.) burgers based on preference. If you remove the seeds from the jalepenos they won't be very spicy (safe enough for kids), but leaving them in gives a nice kick. Thanks for sharing!

Smoky Mountain Chicken

Very good recipe. I only used about 1-2 tablespoons of BBQ sauce per chicken breast. And I used cheddar cheese to better replicate the restaurant version. The seasoning was really wonderful. Thanks for sharing!

Guacamole

This was my first time ever making guacamole & it turned out fantastic. I added more cayenne because I didn't really think it was spicy. To make the guacamole less chunky I used my electric hand mixer to blend it all.

Pan-Fried Asparagus

This recipe got me eating asparagus again! I had so much asparagus growing up, I burnt out on it. This simple, yet tasty recipe really enhances the flavor of the asparagus. My husband & son didn't care for asparagus before either, but love it prepared this way. Note: I think the recipe should be 1 lb. of asparagus BEFORE TRIMMING. After you trimming it will equal about 1/2 lb. I think that may be where the other reviewers had a problem. Thanks Kim for a great recipe!

Anniversary Chicken I

Pancho Villa Baked Tilapia

I thought this recipe was just ok. I used the Rotel canned tomatoes & chiles that already have lime & cilantro in it. I usually love this flavor combination so I it would be good with the fish. It was easy but it was pretty underwhelming. Also, this produced so much juice per packet there is no way I would open them at the table unless you want a big mess.

Italian Sausage Soup with Tortellini

Pretty simple & very good. I used 2 cans of diced tomatoes & added a bag of fresh baby spinach at the same time as the zucchini. I think this recipe would be equally good with your favorite pasta instead of tortellini.
