Simple White Cake

Made this cake for my daughters birthday. She wanted a teapot birthday cake, so I baked it in pyrex mixing bowls. Added a layer of frosting on the top of one of the bowls and inverted the 2nd cake upside down on top to make a teapot shape. Homemade marshmallows made a great handle and spout. Cake turned out amazing. I wanted something dense enough to hold together, and at first I was worried. But after putting the cake in the fridge for a bit, the crumb held together very nicely. Everyone thought it tasted amazing. I just used this recipe again today, and got what some of the other reviewers referred to as 'cornbread' texture. BUT I used freshly ground whole wheat flour instead of white... so I'm sure that was the reason. Perhaps I didn't beat it long enough too, who knows. It still tastes good, just not the same texture as before. I'll definitely play with it more, because this recipe is a keeper.

Super-Good Oatmeal

I don't recommend the microwave either, oatmeal cooks in about 5 minutes on the stovetop and turns out tasting so much better. Oatmeal in the microwave turns out gummy and tastes like glue. It tasted good on the stove, had a nice nutty taste. We added craisins (kids love them) and they ate it up! Even filled up my always hungry 4 year old, she didn't quite finish her bowl before declaring herself full. It was almost 2 hours before she asked for a snack. :)

Debdoozie's Blue Ribbon Chili

This is our go-to recipe for chili now. YUM! Everyone that tries it loves it, and my family raves about it. The salsa is an excellent touch. I make the homemade chili seasoning from the site also, and it is absolutely delish. Whip it up with some buttermilk cornbread and it's a dinner everyone will love! We serve with sour cream and cheese.

Sweet Dinner Rolls

These are wonderful! I use 100% whole wheat (freshly ground) and they still turn out amazing! Though I do add a bit more milk because the whole wheat can make it a bit more dry. This recipe also yields a delicious LOAF of bread! Holds up to cutting well and I can slice it pretty thin, which is a major bonus when trying to make sandwiches. :) THANK YOU! (I also cut the sugar back by about 50% and use Sucanat, Rapadura, or Honey instead)

Peanut Butter Chili

We did not like this at all. Too much peanut butter taste, and it didn't meld well with the chili taste. (in our opinion) I ended up making a sandwich for dinner, and my husband managed to eat it, mostly because he didn't want to waste it.

Dominican Style Oatmeal

We LOVE this oatmeal! We follow the recipe almost exactly, and it tastes so good! Our daughter requests it several times a week. The only tweak we make, for personal preference, is to cut the sugar back. Mmmm...

Manicotti Shells

Very good. I use these noodles when I make Manicotti Alla Romana from this site. When making these, I found it easiest to use a griddle instead of a skillet. Much easier to flip. Also, when you pour the batter onto the griddle, use the back of the spoon to spread it around and make it as thin as possible, otherwise it can end up too thick and bready/doughy. Thinner is definitely better! Give them a try!

Baked Chicken Nuggets

These are AMAZING! My daughter loves these nuggets. We did a very rare stop at a fast food chain and she saw they had nuggets and wanted them... she HATED them! lol. Told me they were "disgusting" (She's 3). These are the only nuggets she'll eat. 'Nuff said!

Hearty Breakfast Cookies

Yummy! My husband and daughter both love them. I put some in the freezer to pack in the diaper bag (she's 19 months). It will be thawed by the time she's ready to eat it. I might reduce the sugar to just 1 cup next time... I think they'd still be wonderful. Taste like oatmeal breakfast squares, only better. Thanks Janet!! I'll be making these over and over again.

Silky Sweet Potato Puree

I used heavy whipping cream since I didn't have whole milk on hand, and left out the buttermilk. They turned out very smooth and creamy, delicious! I used canned sweet potatoes, mashed them with a fork, and then put them in the food processor. Using the mixer seemed to pull out a lot of the small husk pieces that were still on the potatoes, they were wrapped around the beaters. I will be making these again! Thank you!

Excellent! I didn't put carrots or celery in mine because I'd gotten it at a restaurant and loved it, and it wasn't in the soup there. Great as a meal or an appetizer. Love it!

Perfect Berry Shortcakes

I used fresh strawberries, and since I didn't have any frozen ones but still wanted the juice, I put some of the berries in the food processor and added it back to the rest of the strawberries. Perfect! I also used whole milk instead of half and half, and it turned out great as well. My husband liked it (there's not much, especially desserts, that he doesn't like!). Great recipe!

Paul's Pumpkin Bars

Scalloped Potatoes and Onions

Hubby requested scalloped potatoes for Christmas dinner... and I loved that this recipe used stuff that I already had at home. No need to buy bags of cheese or cartons of cream. Tasted wonderful, he couldn't believe there was no milk! Will make these again.

Cheddar Bacon Hamburgers

I made these for the first time several weeks ago, and now my husband requests them all the time! I tried using bacon bits the first time, but it didn't taste much like bacon in the burger and left strange red 'dots' in the meat - it looked like the meat was uncooked in spots (and it was cooked). So we always use real bacon crumbled up now. The topping we love is my moms bbq sauce mixed with mayonnaise - it's amazing! Totally don't need ketchup when you do that, and it goes perfectly with the taste of the burger.
