Lower Fat Banana Bread II

Baked exactly as directed and loved it! My boyfriend couldn't get enough. Moist and wonderful. I cooked it a bit longer when I made it the second time around (by accident), but it gave it a nice crisp 'crust' on the top that I definitely loved.

Spiced Pumpkin Seeds

Excellent! Did it with some of the alterations that other people have mentioned - 3 tbsp canola oil, 1 tsp salt, 1/4 tsp garlic, and kept the rest as is. It was delicious!! I love it. It was a big hit when I brought it into work.

Chicken Puffs

Pretty yummy! I had to bake it twice as long, though - about 22 minutes - and I did the "lower fat" version as well. It was sweet from the cream cheese, though; something I wasn't expecting.

Parmesan Asparagus

Easy and delicious! Definitely a do-over. I think the texture was just fine - I think you just need to adjust your cooking time depending on the thickness of your asparagus stalks. But, that's pretty common sense when cooking asparagus. :)

Maple Apple Crisp

SO EASY!! I did it in an afternoon with Jonathan apples, which are kind of tart. I did lessen the butter. This is SO GOOD. I'm gonna make this all the time. A quick and easy recipe that makes it so easy to have a delightful home cooked dessert.

One Bowl Chocolate Cake III

Very easy to make, though the boiling water step threw me off. It definitely does have a strong baking soda taste, and I didn't find it that flavorful. (Topped with Pilsbury Vanilla frosting, but it almost completely overpowers the cake's flavor.) Will keep on the lookout for other cake recipes.

Cinnamon-Roasted Almonds

I tried making these cinnamon-roasted almonds, and I wasn't really impressed, even with "improvements" of using vanilla instead of water, and doubling the cinnamon. Mine ended up looking nothing like the image, so maybe using sugar in the raw is better to give them a bit more texture. I really preferred the Candied Almonds recipe found on allrecipes to this one. :\

Candied Almonds

I sure wouldn't consider this "foolproof"! Even after multiple tries and trying things out in different ways, I never got the same kind of candied/Bavarian almond that's often found at fairs and festivals. However, I did get delicious sugary and cinnamony almonds with a teeny bit of crunch. However, overall they are still soggy, even after roasting out all of the liquid. (I was left with lots of little bits of crystallizing, and not much crystallizing on the actual almonds.) Any suggestions??

A Good Easy Garlic Chicken

I liked the idea of this, but it was so ungodly salty, it was a good thing I had some rice to cut it. I wouldn't consider frying in butter a healthy option (baking in the oven takes the same amount of time and much less work), but the one thing I did like about the chicken was that it was very moist, despite having the saltiness of jerky.

Wacky Cake III

I really enjoyed the way this cake tasted, though I did do the veggie oil subsitution for butter, and powdered sugar on top instead of frosting. To me it was plenty rich and chocolatey without chocolate frosting on top. The only downside was that I found it VERY difficult to mix it in the pan without sloshing stuff all over the place....I used a 9" x 13" glass Pyrex pan, so it wasn't any sort of unusual size. I would've much preferred mixing it up in a separate bowl.

Chocolate Chocolate Chip Cookies I

These were delicious! Definitely a bit tricky with bake time - half of my cookies came out burned on the bottoms, half came out fine. Definitely watch them carefully while you're making them. However, they are well worth it! I definitely plan on making these again.

Quick Chicken with Asparagus and Provolone

Very delicious! Wasn't as healthy as I was looking for, but it still turned out great. We had it for dinner on Valentine's Day, and it definitely was a pleaser. :)

Asparagus, Chicken and Penne Pasta

Have tried this at least twice and love it! Used McCormick Grill Mates Roasted Garlic & Herb instead of red pepper flakes, a little less spicy, but turned out just great.
