Black Bean and Corn Salad II

I took it to a family BBQ and it was a big hit! Out of preference I cut back on the cilantro, left out the bell pepper and green onions and added a bit of onion seasoning instead. I used lemon juice instead of lime juice because that's what I had and there were no complaints. My family scooped it up with Fritos. There were no leftovers!

Chewy Peanut Butter Brownies

Awesome! Tastes like the Reeses' Peanut Butter Bars but better! Followed the recipe exactly, except baked for only 25 minutes. Topped with the chocolate recipe on the back of the cocoa container as recommended by the other reviewer - wow! So good, I've already made a 2nd batch for my husband and brother-in-law and have been asked to make more for Father's Day.

Campbell's® Spicy Salsa Mac 'n' Beef

Good, easy recipe. I boiled the noodles in a separate pot in water instead of the broth. As suggested I browned the beef with some onion, garlic and taco seasoning. I used 2 lbs of ground beef and more pasta. After draining the grease I added 2 cans of diced tomatoes with chilies, 2 cans of the cheese soup and the cooked pasta. The chilies gave it a bit of a kick, I made add one more can next time.

Slow Cooker Enchiladas

My husband and I loved this! I'm from south Texas and was very skeptical about soup and salsa in enchiladas and cooking it all in slow cooker, but it was delicious! I used 2 lbs of ground beef and 2 cans of cream of chicken instead of the cream of mushroom. I also heated a little bit of oil in a frying pan and dipped the tortillas in for a few seconds before placing them in the crockpot. Just enough to cover the tortilla and get it wet, but not long at all otherwise it turns out crispy like a chalupa. This is what my grandma does when making enchiladas, so that the tortilla doesn't break when rolling; I read the reviews that mentioned crumbling so I tried this and didn't have any problems. Great recipe, definitely a keeper!

Bacon Cheddar Deviled Eggs

I love deviled eggs and I LOVE this recipe, just when I thought deviled eggs couldn't get any better. I used bacon bits as mentioned by one of the other reviewers, it added a nice salty flavor and a bit of a crunch.

Apple Dip

My sister-in-law adds Heath Bar bits. I made it for a bridal shower, everyone was very curious as to what it was but as soon as they tasted it... it was gone! Everyone loved it!
