Cinnamon Cherry Cheesecake Squares

This is so good. I didn't even bother making the sour cream topping, it wasn't missed. Next time, I will add two cans of cherry pie filling on top.

Portobello Mushroom Stroganoff

I'm so glad that I read other reviews and added garlic and worcestshire sauce, or I probably wouldn't have liked it. With the additions, it was really good. My boyfriend is a vegetarian, so I've learning to make meat-free meals that we both like and this one will probably get a regular rotation. I used all the sour cream it called for, but don't think I will use all of it next time.

Carrot Cupcakes with White Chocolate Cream Cheese Icing

I used this icing on red velvet cupcakes. I think I ate almost a quarter of the icing before I realized it. It was really good and not too difficult. It isn't a super stiff icing, so if you want to pipe it, it will take a little additional confectioner's sugar. Next time, I'll try the icing with the carrot cake. Or maybe just the icing...

You can use a 5-biscuit can of buttermilk biscuits and a miniature pan or very small casserole dish for two-servings. My husband and I made it this way the other night so that we wouldn't eat the entire bundt pan (it's happened before).

Baked Honey Mustard Chicken

I used a couple of tsp. of dry mustard powder (because we didn't have prepared mustard) and it turned out pretty well. I scaled it down for two and baked it in a small round stoneware pan, so the chicken was really juicy. My husband said that he would eat it again and that's saying something.
