Annie's Fruit Salsa and Cinnamon Chips

This is time consuming as others have said but well worth it. The chips are to die for. I used orange marmalade but I think I will try peach or apricot preserves in the future. I could take the orange marmalade over some of the fruit. I substituted blackberries for the raspberries.

World's Best Peanut Butter Fudge

Flavor is very good and it is easy to make. Just a time make sure that the sugar is disolved completely before proceeding to next step. I was in a hurry and did not make sure and my candy was a little grainy tasting.

Terry's Texas Pinto Beans

I have made this several times with a few modifications of my own. I first do a quick soak on the beans by sorting and then covering the beans with water, bing to a boil and cook 1 hour. Then turn off the heat and let stand covered for another hour. Drain off the water and rinse beans. I then add the ingredients shown in the recipe with the following modifications. I use 5 chicken broth cubes and 5 cups of water instead of the sodium free broth. I also add a couple of ham hocks for flavor. I cook the beans all day long on simmer. I serve with Grandma's Buttermilk Cornbread found on this site.

Pumpkin Fudge

The recipe did not work for me as written. I also had a gooey mess that would not set up completely. So the next day I managed to get most of the candy off the foil into a pan and cooked the ingredients to 260 on the candy therm. Once it reached temp I removed from heat and added another cup of white choc chips,a cup of miniture marshmallows and 1/2 tsp nutmeg. Stir until melted and poured into a lightly buttered pan. I put it in the refrig to cool for 2 hours and then cut into squares. This saved the candy and everyone enjoyed it.

Libby's® Pumpkin Roll with Cream Cheese Filling

This was my first time making a roll cake of any kind so was nervious. I followed the recipe to a tee and it was wonderful. I used pecans instead of walnuts as we do not care that much for walnuts. My husband says this is better than pumpkin pie or pecan pie. He really loved it. This is a keeper at my house. It was easy to make and so so good!

Mini Cheesecakes II

Used a very mini muffin pan. I was able to get 48 from the recipe. They look so special on my Christmas tray. Was able to use one new mini vanilla wafers for crust for these. I only had to bake 15 min each.

Luscious Slush Punch

Cookies 'n' Creme Fudge

I made these for my daughter and she loved it. She likes oreos and white chocolate. Tip: be sure to only break the cookie in about 5-6 pieces for the best result and look. Will make again and again.

Divinity

I had, key word HAD, an upright mixer. After 15 min of beating and still glossy look on the candy, the motor on my mixer burned up. The candy works like taffy when trying to get it out of the bowl and formed. I finally let it cool some more and tried to form into balls with my buttered fingers. It held shape for about 2 minutes and then spread out like a little white cow pod. The only reason I gave this a three is because you could still eat it and the flavor was good.
