I am a determined survivor (of several things) and I have learned to never give up.
My favorite things to cook
I am adventurous and love trying to attempt at making things from all over the world and trying new stuff all the time. I am a huge fan of taking something simple like tomato soup and adding spices and stuff and attempting new flavors in things that are still easy to make. My new passion with cooking is finding healthy substitutions that still convey the right textures or effects.
My favorite family cooking traditions
As a family we always try a new unexpected twist on a dish once a week.
My cooking triumphs
I can make a slice of "chocolate" cake that has less then 60 calories a slice.

Summer Squash and Onion Cheesy Casserole
It is a nice alternative to cheesy hashbrowns, but it lacked a wow factor.

Slow Cooker Guisado Verde
Very good. I made a few changes to fit personal preferances, such as using a leaner cut, and left out the cilantro completely, and used no canned products but instead used all fresh ingredients. Tasted wonderful and even better when topped with a dash of sour cream

'Calabacitas Guisada' (Stewed Mexican Zucchini)
I didnt need to use that much oil and I left out the salt completely. It is still absolutely fantastic and it will be dropping into my usual rotation because of the simplicity and a great way to use up the 4 most common ingredients at my house, onions, garlic, tomatoes and zucchini!
