Delicious Ham and Potato Soup

This was fantastic, almost like ham and scalloped potatoes leftovers from Easter. Next time I will add a can of sweet corn too and it will be perfect!

Gary's Stuffed Mushrooms

These were really good (and all 50 of them got eaten.. and fast) but next time I will make a few changes. I would skip the butter, except in the stuffing prep. Then half the cream cheese and add some shaved fresh parmesan cheese (not the grated stuff) or even blue cheese in its place. Will definitely try these again!

Mediterranean Potato Salad

This was great with just a few small changes to suit our tastes. I used really flavorful salad dressing which I think made the difference for us – Paul Newman’s Italian. I doubled the potatoes, dressing (not the lemon) and feta. Skipped the cucumber and did both red and orange peppers for color and crunch. This one tastes better at room temp - it was delicious tasting it when I first made it, and even better the next day! Thanks for a great recipe!

Pork Chop Pileups

It turned out good in the end, but I made a few changes. I did the potaotes on the bottom, but I used 2 cans of soup with the same amount of milk. I heated them together in the microwave to a low boil and added 1/2 cup of shredded old cheddar and stirred to melt. I also added 1 tbsp of Worsc. and a dash of paprika then poured the whole thing over the bean, chops and potatoes. I baked it for the first 25 minutes at 400 and that kept the timing to an hour. Will make again for sure.

Sweet And Sour Chicken Meatballs

This sauce is the best sweet and sour I have come across! As I was short on time, I skipped making the meatballs and just browned the meat and made a stirfry with the sauce. Adding any array of your favourite veggies just makes it that much better - 5 stars! Edit - I have now made this a bunch of times and I found doing boneless skinless chicken breasts pieces in place of the meatballs is the winner!
