Chocolate Pudding

Wow, the best chocolate pudding ever. All I had on hand was Orginal Coconut Milk, so I substitued it for the Almond Milk. No more boxed pudding for me, this is great! I also added I added 1TBSP extra sugar.

Fresh Tomato Salsa

This was easy to preapre, and delicious. I did make a few changes to the reecipe. I knew that 5 serrano chiles would make it to hot for us, so I cut down on those. I added jalapinoes intead of the serranos. Also added in avacoda and garlic

Biggest Bestest Burger

Cheese Sauce Over Cauliflower

This was a nice change from our usual side dishes. It was very tasty and easy to make.I don't make califlower often as it seemed so bland. But with this recipe It was not only yummy, but made a pretty addition to our table.

this is a wonderful side dish. My husband loved it and so did I. I will make this often. It is not straight carbs, but loaded with protien. And so yummy.

Apricot-Mustard Grilled Pork Tenderloin

So easy and oh so tasty! We don't eat much pork, but this will find it's way to my table more frequently. I will used the sauce on chicked and fish. We loved it.

Couscous and Cucumber Salad

We enjoyed this salad. It was something different from the norm. I used bottled lemon juice because that was what I had. Next time I will make a point to use real lemons. Very refreshing.

Sweet Sweet Potato Casserole

We loved this casserole, I did however make one change that made all the difference, and that was to add cinniman and a dash of allspice. The coconut and pecan addded just the right amount of crunch and sweetness. This will be on my table for sure at holiday time!

Broccoli Chicken Casserole II

The only change I made to this recipe was to use eggless mayonaise. It goes well with rice. The tang of the lemon juice and the curry make this the special dish that it is. We love it!

Southern Fried Cabbage

This was really good, my husband loved it. I used red cabbage only because the green cabbage heads were all to big for just the two of us. I also used a 100% natural sausage, as my husband cannot have any presertives in his food. I cooked it in a little butter and olive oil.Will make this again.

Szechwan Shrimp

We loved this recipe! However I will make more sauce the next time. The heat was perfect for us. I used half shrimp and half cod and added some brocoli as others suggested. Big hit at our house. I will try this on one company in the future.

Kyle's Favorite Beef Stew

Wonderful beef stew! I gave it 5 stars, but I added some Yucatan Sunshine hot sauce for a bit of extra spice. We had guest for dinner, and everyone loved it. This has become my new favorite beef stew recipe.

Slow Cooker Adobo Chicken

Yum! The chicken was so tender it fell apart, and the flavor was great. I made one adjustment and that was to add 1/4 cup molassas, which gave a it a slightly sweet taste. We enjoyed it even more on the second day.

Corned Beef and Cabbage II

Just for your information, we met a man who was born and raised in Ireland, and he said that he never heard of corned beef and cabbage until he came to the US. Very intersting. This recipe was excellent, very different than how I have ever prepared it in the past. I give it five stars because the flavor was wonderful. The only problem I had, was that my corned beef was considerable smaller than called for in the recipe, so it was just a bit dry.

Coconut Cream Cake I

I prepared the cake for a group of friends. The response was great. several wanted the recipe. I had made another coconut cream cake using a slightly different recipe, and the cake became dry after the second day. my only suggestion is that if you are taking the cake to someones house make sure that they have room in the frig for it, as it does sort of melt if left at room temp very long
