Peanut Butter Bars I

Reviewed: Jul. 23, 2008
SO GOOD!!!! If you are a peanut butter/chocolate fanatic like me, then you will love this. I followed other reviewers suggestions to make the recipe easier by melting the peanut butter with butter, then mixing with graham crackers and powdered sugar. Also, chill the peanut butter base for 15 minutes before topping with chocolate mixture.

Barbie Doll Cake

Reviewed: Jul. 18, 2008
This is a very fun cake that I have made several times. I agree with other reviewers that this recipe needs to be "tweaked". I use the large Pampered Chef batter bowl, using 1 and a 1/2 box mixes. Barbie's legs should be wrapped tightly with plastic wrap. I use a naked barbie and pipe frosting on the body to create her bodice.

Gourmet Pretzel Rods

Reviewed: Jun. 13, 2008
Great recipe! I cut the pretzel rods in half (to better fit on the goodie tray) and dipped in caramel and chocolate. Let the caramel set and then dip in chocolate. If the caramel "pools" on one side while setting, roll the rods to smooth out the caramel after it has set. You can do so many things with this recipe, so many options for coating the rods.....nuts, candies, colored drizzles, sprinkles, etc.

Giant Ding Dong Cake

Reviewed: May 9, 2008
This is a FUN recipe! I have made it as a cake and as cupcakes. For the cake version, I agree that you should make it in layers, rather than putting all the filling into the center. As cupcakes, I used a pastry bag with a large tip, inserted it into the top of each cupcake and filled until I saw the top of the cupcake rise. I dipped the top of each cupcake into the glaze and let set before adding the white swirl. I got 21 cupcakes, filling each 3/4 full and cooking for 18 minutes. These are better made the day before. Also, you really need to whip the filling mixture to incorporate all the ingredients well.

Wife Saver French Toast

Reviewed: Jul. 19, 2008
I made the recipe as is, and feel it is only 4 stars. The flavor is good, but the texture is MUSH. If I were to make it again, I would cut the milk by nearly half. It is also very sweet, I would be tempted to cut back on the corn syrup. The caramel side of each piece was the best part.

Mango Lime Smoothie

Reviewed: Jan. 6, 2009
Very good. I made the recipe as is, but like other reviewers after tasting, I wanted something more creamy so I blended in a cup of strawberry yogurt. Delicious!!!

Insalata Tricolore

Reviewed: Jul. 24, 2008
This salad is DIVINE! Caprese salad has always been my favorite salad, but the addition of creamy avocado slices, puts this over the moon. The recipe does not call for basil, but I still like to add some basil strips to my salad. Also, to make this worth it, invest in quality ingredients-you won't be sorry.

Fantastic Mexican Dip

Reviewed: Dec. 27, 2008
This was a big hit with my guests. It has a terrific presentation, but all raved about the flavor. I took others advice and put a layer of bean dip in the bottom of the plate and then followed the recipe's layering instructions after that. I also agree that making the "base" a day in advance to let the flavors blend makes a big difference!

Freezer Berry Jam

Reviewed: Jul. 27, 2008
Delicious! A great combination of fruits that produces a yummy jam. My jam did not thicken much, but it was my first time making jam, so I would not fault the recipe.

Ice Cream Sticky Buns

Reviewed: Aug. 5, 2008
Oh my goodness! These are delicious! Just because we like it, I added 2 tbsp of cinnamon to the sugar/cream mixture. I agree with the other reviewer that you could easily cut back on the sugars as it turns out very sweet. Next time I make this, I may experiment with other flavors of ice cream besides vanilla-maybe Butter Brickle, Cinnamon, or Caramel ice cream. Possibilities are endless. YUM!

Heavenly Pink Salad

Reviewed: Oct. 26, 2008
This salad was good, but I am only giving it 4 stars because I feel like the recipe needs modifications to make it really good. I did not use coconut because the group I made it for does not like coconut. Also, I added 2 sliced bananas, which were a nice compliment. Lastly the most critical change for this salad to be excellent is whip up 12 oz of heavy whipping cream and use that instead of cool whip. The salad is plenty sweet without the addition of more sweetness from the cool whip. The whipped heavy cream adds the creaminess the salad needs, without taking the sweetness factor over the top.

Mini Key Lime Cupcakes

Reviewed: Feb. 21, 2009
Very yummy, made it for a tropical themed party. I used Heavenly White Cake (from this site) for the cake portion. I followed the recipe as written for the topping and frosting and they were very good. Not too sweet. The key lime topping started to run off my cupcakes after a while, so next time I may try to make that a little thicker.

Rolled Fondant

Reviewed: Feb. 21, 2009
This is the first time I worked with fondant. I did substitute corn syrup for the glucose syrup. I think it came out OK, I was not crazy about the flavor, but then, does fondant ever taste good? It's mostly just to have a nicely decorated cake.

Cream Filled Cupcakes

Reviewed: Jun. 13, 2008
I only made the cream filling from this recipe, but it is 5 stars all the way! It is the best cream filling I have found for cupcakes. I have found it is better to inject the filling from the top of the cupcake as I use paper liners for my cupcakes. The frosting will cover up the injection hole. I used a pastry bag fitted with a frosting tip, insert directly into the top of the cupcake and squeeze gently to fill, and stop when you see the cupcake "expand".

What a great recipe. It came together so easy and quick. My family loved and have asked me to make it again. We may add more "toppings" next time.

Holland Boterkoek

Reviewed: Sep. 9, 2008
Very Good. Even my husband who does not generally like Almond flavor really liked this. The texture (for me atleast) was more cookie like, but absolutely delicious! I may try different flavors next time, like vanilla instead of almond.

Vanilla Glaze

Reviewed: Aug. 18, 2008
Oh YUM! Such a simple and easy to put together galze. I agree with other reviews that you need 2 Tbsp of milk, rather than tsp. I used a little bit more butter than called for and also added pumpkin pie spice to the glaze which was delicious on the spice bundt cake I made.

Pina Colada Punch

Reviewed: Feb. 21, 2009
Ooh la la, oh so good! This punch is so good! I followed the recipe as written and was very happy. I did use the crushed pineapple, but processed the heck out of it with my food processor after reading other reviews not being happy with the "chunks". It worked great while still adding a little bit of texture to the punch. This does make a ton, so be prepared with a big bowl or pitcher. Also, mine did not freeze to slushy consistency in 4 hours, it took much longer.

Island Kielbasa in a Slow Cooker

Reviewed: Feb. 21, 2009
Good recipe, but needs modifications to make it 5 star. I used 1 cup ketchup and 1 cup chili sauce. I reduced the brown sugar to 3/4 cup and that was plenty sweet. I also added a chopped onion and green bell pepper. I served over rice and it was very good. It does make a lot of sauce. Next time, I may add corn starch to thicken as others have suggested.
