Blueberry Cream Muffins

These were by far the best blueberry muffins I have ever made. I used milk instead of sour cream because I didn't have any on hand (but I'll definitely use sour cream when I have it!) . I took advice from other reviewers and used half white and half brown sugar, I also used way more vanilla (just cause I love it!) and about a teaspoon of strawberry extract for some added fun. I also took some advice from another reviewer and used an old-fashioned ice cream scoop. The muffins came out all the same size- nice and big! I highly recommend using this recipe. It's the only blueberry muffin recipe I'll ever use again! So fabulous! Thanks for sharing!

Black Bean Vegetable Soup

The best black bean soup I've ever had was in a cafeteria. It wasn't like most black bean soups. It was chunky with lots of vegetables. I've been looking for a recipe similar to that soup and this is it! This soup was so delicious. I had to improvise with what I had though. I didn't use carrots, used frozen corn with peppers instead, and to save money, instead of buying spices, I bought stewed Mexican style tomatoes that already had spices in it. I also added sliced celery and red pepper flakes. Sooo yummy! And it's something new to take for lunch instead of frozen dinners!

Irish Soda Bread I

Garlic Red Potatoes

These potatoes were fabulous! We didn't have any lemon juice on hand so we just left it out. Also used seasoning salt instead of salt and added a teaspoon of dried parsley flakes for color. The cooking times were way off for us, though. After we did the said cooking time we left them in the oven for 10-20 minutes more. Thanks for the wonderful recipe!

Absolutely Fabulous Greek/House Dressing

Beth's Spicy Oatmeal Raisin Cookies

I was looking at this recipe thinking bad thoughts because I have never liked oatmeal raisin cookies but then I thought, "how can over 1000 people be wrong?" so I decided about 20 minutes ago to make these and I'm in love. True story.

Guacamole

OH. MY. GOD. I just made this and it really is the greatest guacamole ever. I changed a few things, however. Instead of three avacados I used four haas avacados, only used half the salt, and to cut down on time, I used half a can of petite diced tomatoes. And I also marinated the cilantro, garlic, and onion in lime juice as another reviewer did. Here's a tip I learned from my father: leave an avacado seed in your guacamole to keep it from turning brown if you plan on putting it in the fridge. It'll keep it fresh. Thanks for the AWESOME recipe!!

Chocolate Chunk-Cinnamon Coffee Cake

This was so so yummy. The cake was super moist and my dad even loved it (he hates chocolate!). The only thing i would do differently next time is mix the cinnamon and sugar in a separate bowl from the chocolate chunks and pecan pieces.
