Baked Spaghetti Squash Lasagna Style

Reviewed: Feb. 27, 2009
First, the squash had to be baked at 350F for an hour. Second, the end product was bland and unfulfilling, but it wasn't inedible. It may have been better with ground beef in the sauce, but the squash was tasteless and the coonsistency did not go well with the sauce. I think this may be a recipe for vegetarians, not for omnivores who enjoy tasty vegetarian meals. Still this is the worst recipe I have tried at this site.

Mulligatawny Soup I

Reviewed: Feb. 25, 2009
I first had Mulligatawny soup in Bali, Indonesia. On one of the many flights over there, one of the channels on my in-flight TV set showed the "Seinfeld" Soup Nazi episode. When I saw this soup on the menu at a restaurant in Ubud, I assumed Providence intervened to tell me to order this soup because the soup was ridiculously delicious. So I was excited to make this recipe and it's good. I substituted 2 T of olive instead of butter to cut down on fat. I increased the curry powder to 1 T, and I added 2 t Garam Masala. In adding Garam Masala, I omitted black pepper because Garam Masala has pepper in it. Instead of adding salt, I threw in an extra cube of chicken bullion. I tried both cream and omitting the cream and topping with sour cream instead. definitely go with the sour cream on top. Much better. I remember in Bali they used dark meat pieces in the soup instead of breast meat (rarely do you see boneless skinless white meat in non-Industrialized countries) and if you don't have a problem with the calories, that's probably the way to go.

Indian Style Sheekh Kabab

Reviewed: Feb. 25, 2009
I used lean beef instead of lambs, and put the chopped chiles, ginger, and onion in the food processor. I added bread crumbs and refrigerated but still had a problem with the kebabs falling apart on the grill. We liberally oiled the grill grates, but the kebabs kept sticking to the grill, and were ripped apart when we turned them. These still tasted wonderful, and I will make them again but I will shape them into patties instead.

Easy to make, not bad, but nothing to rave about. Not unhealthy either. Average.

Balsamic-Glazed Salmon Fillets

Reviewed: Feb. 24, 2009
I live in Japan part of the year so I eat a lot of fish and salmon is probably my favorite fish. This glaze was way too overpowering for salmon. Salmon has a lot of oils in it, imparting a wonderful and distinct flavor, and this glave just masked those natural flavors for which salmon is so appreciated. this glaze might work well with a blander white fish. Other than raw, my favorite way to eat salmon is a recipe on this site called "Grilled Cedar-Planked Salmon." Try that one. It's fabulous.

Rosemary Garlic Rub

Reviewed: Feb. 23, 2009
Great rub. It's salty, but if you're the type who salts their fast food fries, it's nothing you can't handle. I used it on grilled potatoes, although I had trouble preventing the potatoes from falling apart on the grill. It's probably best not to flip over but once. Excellent rub though.

Decent, healthy autumn dish. I eat this with the sauteed apples from this site. Lots of fiber.

Cheddar Bay Biscuits

Reviewed: Feb. 21, 2009
I've never eaten at Red Lobster so I don't know what these biscuits are "supposed" to taste like, but these are delicious! In the dough mixture, I added 1 t. garlic powder, 1/4 t. onion powder, 1/2 t. dried parsley, and doubled the cheese. I also added 1/4 t. of Old Bay into the melted butter. To die for!

Grilled Garlic Artichokes

Reviewed: Feb. 20, 2009
I steamed these whole for 35 minutes then refrigerated and cut in halves. I was worried about all the calories in the dip so I only made half the sauce and brushed fairly conservatively on the grill. I think I prefer my mayo/curry/white pepper dip instead.

Portobello Mushroom Burgers

Reviewed: Feb. 20, 2009
I topped with sauteed onions and blue cheese instead of provolone. Excellent. My carnivore BF loved them.
