Portobello Mushroom Burgers

Sirloin Tips and Mushrooms

This recipe is healthy and tastes great, but I changed it so much it's difficult to rate the original recipe. I increased the amounts of garlic to 3-4 cloves, tomato sauce to 1 cup, and red wine to 1 cup. I added a can of tomatoes, a 1/3 can of tomato paste, used fresh shrooms and added onion. I also added oregano, rosemary, sage, thyme, and bay leaves. I sauteed the garlic, onion and shrooms, then added the spices, and then the beef. Added the rest and then simmered for 1.5-2 hours. The simmering time to reduce all the extra liquid is key to make a rich sauce!! Very tasty.

Sour Cream Mushroom Chicken

I just sometimes don't understand the criteria with which people rate recipes. This chicken is easy to make, fairly healthy especially served with just steamed broccoli since the sauce goes well with the vegetable, and it's not bad, but certainly not an amazing awe-inspiring dish. It's standard fare for a busy work night when one wants something decent and healthy and easy to make. I seasoned the breasts with salt and pepper before baking and substituted light sour cream.

Curried Honey Mustard Chicken

I used oil in place of butter, and decreased it to 3 T. I butterflied the breasts, then marinated then grilled. these were satisfactory. I love curry, but this was nothing to write home about. They were healthy, standard fare but not exciting.

Baked Mushroom Rice

I needed to cook this about twice as long as the recipe recommended. It was good, but labor-intensive. I probably won't make it agin due to the time factor though.

Texas Chicken Quesadillas

I make this if I have leftovers from BBQ chicken. I just shred the meat and then follow this recipe. I also make it with whatever type of cheese I happen to have. Tasty, inexpensive, and easy to prepare!

Parmesan Tomatoes

These are delicious, and you can substitute whatever cheese you have on hand for mozzerella. These are also excellent the next day paired with some salami and crusty, sturdy bread in sandwiches.

Spinach and Rice (Spanakorizo)

I added feta, substituted chicken broth for water and added oregano. I really wanted to like this recipe because I love spinach and Greek food. We "go Greek" about three times a month, but this recipe was missing something. Its consistency was a bit soggy, and it was a little bland. I think the spinach made it too bitter. Perhaps a touch of sugar would balance the bitterness? But it was very time consuming to prpare, and with the feta and two bags of spinach, a mite expensive for a side dish. It wasn't bad, but not worth the effort and cost.

Sensational Sirloin Kabobs

These are very good. I double the marinade, and then marinate overnight. I use fresh garlic instead of powder, which mkes a big difference. Makes a lot of food.

Penne Pasta with Spinach and Bacon

This tastes great. The second time I made it though, I used a box of frozen spinach instead of fresh, and the spinach absorbed all the sauce and it became one big green lump of bacony-tomatoey sauce. So be warned--only use FRESH spinch!

Black Bean and Corn Quesadillas

I make these as vegetarian and sometimes I add leftover shredded chicken. Both are excellent. Instead of regular corn, sometimes I substitute Mexicorn. I also add salt, 2 cloves garlic (everything tastes better with garlic) and cumin. I also find them easier and less messy to handle if I spray a cookie sheet with Pam, load the contents onto one half of a large (not 8") tortilla, fold over the the other side, and then spray the tortilla with Pam. I bake them for 8-10 minutes at 350F.

Roasted Portobello Mushrooms with Blue Cheese

These shrink A LOT in the oven so it's best to use GINORMOUS caps. I grease the cookie sheet, add garlic and a little balsalmic. Don't knock the soy sauce. My white bread BF thought adding soy sauce to everything was weird and gross, but now he has seen the light. I end up baking these about 6 minutes. I like to serve these with "Pork chops with blue cheese gravy" and sauteed onions. I also add a little soy sauce to the blue cheese gravy--Try it, it's good...

Black Bean and Salsa Soup

I rarely award five stars to a recipe because I think reviewers hand out 5 stars a little too promiscuously on this site. Many of my high ratings are compromises--for example, it's healthy but isn't superb tasting, but I rate it highly because it's tasty for a healthy recipe. this recipe has everything--it's easy to make; it's healthy; it's delicious. I sautee some diced bacon and reserve it--use a tablespoon of dripping to sautee half an onion, and reserve. Add a splash of key lime juice before prosessing. after processing I add reserved bacon and onion. Wonderful!

Apple Butter Pork Loin

Solid, but not spectacular. Takes forever to cook uncovered. I cover it and halfway through take the cover off. I also reduce the amount of apple juice.

Spinach and Mushroom Quesadillas

I like this and my carnivore BF prefers this quesadilla over the meat-filled varieties. I use Smoked Gouda instead of cheddar. The smokiness really pairs well with the earthy pungency of the portobellos.

Oranged Cranberry Sauce

I wanted to like this so much I made it for the first time for Turkey Day. I love cinnamon, orange, cranberries, and Jamaican food. I hoped it would taste spicy and comforting, but I think the orange zest made it too bitter. I will not make this again.
