Carrie's Artichoke and Sun-Dried Tomato Pasta

It wasn't bad; it was edible but I will not make this again. I love all the ingredients in this recipe. I adore sun-dried tomatoes, artichokes, fresh tomatoes, and mushrooms. But together, they don't work. The artichokes impart a sour taste, and I think the sun-dried tomatoes are too intense, so the flavors clash. It's not bad, just kind of sour and bitter and bland at the same time. It reminds me of something you might throw together when you haven't planned dinner and you have all of the ingredients lying around, and it theoretically sounds really delicious, but in the end it doesn't really work. If you have no dinner planned and want something quick and you have the ingredients and no better options, you may wanna try this, but I wouldn't PLAN this as a dinner.

Southwestern Egg Rolls

These are spot-on for Chili's Southwestern eggrolls!!! There are Chili's in most large US airports, and when I return to the US after being out of the country for months or even over a year, I spend my layover time in Chili's and I always order the Southwest egg rolls. Now, I can order something else.

Jay's Jerk Chicken

Very good. The marinade really penetrated and flavored the chicken. I used one Scotch Bonnet pepper instead of a jalapeno, and it still was not spicy at all. Next time I'll try 3 Scotch Bonnets or Habeneros.

New Potatoes with Caper Sauce

Excellent. I would also suggest cutting potatoes to 1" cubes.I served these with dolphin fillets, and I was worried that they may overpower the delicate flavor of the fish, but they paired wonderfully with the dolphin.

Stuffed Shells I

Very Good. I halved the recipe and it fits into a 9x13 pan. I subbed reudced fat cottage cheese and lo-fat mozzarella and didn't notice any difference. I added 10 oz. frozen chopped spinach. I also used 4 cloves of garlic instead of powder. I added salt and pepper to the filling and piped in the filling using a zip loc bag. I boiled the shells for only 10 minutes so they were super al-dente to make handling easier. I covered the shells with the "Best Marinara Sauce Yet" recipe from this site. Very tasty and not too much work.

Cake Mix Cookies VIII

Very easy and tasty. To get a better shape and thicness, I refrigerated the batter for a couple hours before baking. When placed on the sheet in balls, they pouffed up while baking then dropped to a nice thickness when removed from the oven. I did one batch without refrigeration, and they spread too thin and broke easily. Like others suggested, I added 2 T oil and 1 t vanilla. I used Devils food cake mix and white chocolate chips.

Spaghetti Salad I

I used light Italian dressing. This salad is as good as the tomatoes you use. It wasn't bad as a healthier alternative to the mayo-based pasta salad, but it wasn't spectacular. Solid, but not thrilling.

Rosemary Braised Lamb Shanks

I made this for Easter dinner and it was delicious, but I adore lamb. The American lamb skeptics were even impressed. It takes a good half hour of reducing the sauce at medium temperature after the shanks are removed from the pot, but the reduction makes a wonderful sauce. This is not difficult to make but the presentation is lovely. I served with potatoes and "Onions baked with rosemary and cream" from this site. Highly recommended.

Best Italian Sausage Soup

Very good, although I had to kick up the flavors a bit. I used 6 cloves of garlic. For that much soup, 2 cloves simply do not suffice. I added red pepper for heat, rosemary, fennel seed and thyme. I also added 2 t. tomato paste to intensify the tomato flavor. Instead of using spinach pasta, I added spinach tortellini as many reviewers suggested. Overall, delicious.

Easy Pizza Sauce III

I wont buy store pizza sauce again. This has the perfect viscosity for pizza sauce; its thicker, tangier, and more robust than the store-bought bottled variety. It also takes no time to prepare and I froze the remainder for future use. I added 1/2 t. sugar, 1 t. basil and 1/4 t. onion powder.

Make-Ahead Spinach Manicotti

Very good. I made them only 4 hours ahead, so I baked them for about 1 hr. 5 min. I also added salt, basil, and Italian seasoning to the filling. I made the filling with part-skim ricotta and lo-fat mozzarella cheese. I stuffed them using a butter knife.

Coconut Tofu Keema

This was good but needed changes. I used only a 16 oz. can of tomato sauce. I also added some garam masala, cardamom, tumeric, and nutmeg. It also needed more heat, so I doubled the amount of red chili paste. Even then, when I ate it on top of rice, I even added some hot sauce.
