Bacon Quiche Tarts

These were simple to make and I got rave reviews! I didn't have any green onions, so I used finely diced red onion, and I only used about 2/3 of the package of cream cheese which worked out just fine. I used cheddar cheese instead of swiss, because that is what was on hand. I used an extra large muffin tin (like for Costco size muffins) as this was to be the main dish at our mini-brunch; the cooking time remained the same. Re-heated them in a 425 degree oven for about 9 minutes once at the venue. Other than the ease to make and great base recipe that this is, the real show stopper was the caramelized onion I topped them off with once they came out of the oven (see my picture). I will make these again and again... Maybe next time using spinach!

BBQ Pork for Sandwiches

I definitely changed this one up a bit, but it gets 5 stars none-the-less because it was so amazing. I agree, a cheap cut of pork works great for this. I uses about a quart of beef stock as I wanted some to freeze for later cooking. I cooked it for about 7 hours, then added about 1/2 tablespoon of crushed garlic and 1/8 tsp liquid smoke. I let it simmer for another 1/2 hour. I served pulled pork sandwiches with bbq sauce on the side right away then saved the rest for enchiladas the next day. This is a great versatile recipe!

To Die For Blueberry Muffins

Yum! One of our family favorites... I like it with blueberries, but also use this base recipe to make raspberry, blackberry, cranberry and tropical (pineapple, macadamia nuts and coconut) muffins. Definitely deserving of 5 stars +

Beth's Spicy Oatmeal Raisin Cookies

Yummy! I changed it up a little though. I used raw organic sugar, all butter, and then added 1/2 tsp nutmeg. I might cut the cloves next time as I'm not a huge clove fan and the flavor was quite strong. Good enough to take the place as my #1 oatmeal cookie recipe.

Creamy Hollandaise Sauce

To Avery's credit, the post did say "tart", which it was. A bit too tart for my taste, so I will add less lemon juice next time. Otherwise I thought this recipe was great. Mine thickened quite a bit, (maybe because I had one egg with twins) but adding one Tbsp. of water at the end worked perfectly! Though slightly modified, I will definitely make this again.

Best Big, Fat, Chewy Chocolate Chip Cookie

This is a fantastic recipe! I did change it up with all natural, organic ingredients. I used raw sugar (that's not so white) and also used 'fine' whole wheat flour. I had to bake them for 22 minutes instead of the recommended 15-17, but it worked out ok because the dough was amazing all by itself, and that gave me plenty of time to sneak several pinches out of the bowl! None-the-less, I'm giving it four stars because of the longer cook time... I'm not convinced I wouldn't have had to go 20 minutes following the recipe exactly.

Lemon Garlic Tilapia

This was good. My son is recovering from having his wisdom teeth removed, and I was looking for a flavorful soft fish he could eat. Poaching it, I used butter, pineapple juice and added the garlic and lime juice to that. I also threw in a teaspoon of coconut butter and at the last minute some diced mango. This was a great tropical dish. I will make it again.

Blender Hollandaise Sauce

The true texture and flavor of this Hollandaise Sauce is amazing! Next time I will add a little less lemon juice and a little more mustard. I used regular, since I was out of dijon, which worked fine. When all said and done, the sauce was barley warm. Trying to short-cut it, I put it in the microwave for 30 seconds at low. I'm not sure this re-heating method works so well, as it had a few lumps in it, but I didn't want to break out the double broiler as half the point of this recipe is ease/little clean-up. I ended up putting the sauce on my eggs and letting the eggs heat it up. I debated giving this three stars for the failure to heat, and five stars for how amazing... truly amazing it would be if it did heat well.

Butter Flaky Pie Crust

I made this with 'extra fine whole wheat pastry flour'. It turned out flaky and good, but I think I might add in a little bit more salt and a little bit of sweetener next time.

Thai Tuna Burgers

I changed this up based on what I had on hand. I used minced yellow onion in place of the green, jarred ginger & garlic paste in place of minced ginger root (I think garlic was a nice addition). I used dried cilantro and instead of bread crumbs, I used 1/2 ground almond flour, 1/2 whole wheat flour. Patties were loose when formed, but firmed up well while cooking. Really, Really liked this. I refrigerated mine and then sliced into strips for a salad later. Great flavor! I might try a bit of cayenne next time and soaking the tuna in coconut milk first.

Libby's® Pumpkin Roll with Cream Cheese Filling

This was good - not amazing, but great presentation and worth making again. I accidentally added a whole stick of butter, and realized it after it was too late. Except for the calories and fat, I didn't regret it... The filling would have been thin otherwise. This way it was perfect. I did add some pumpkin pie spice to the cream cheese mixture and a little extra vanilla because of the butter mis-hap. Like I said, it was good and I'd make it again. My main complaint: I guess I wanted it to be more pumpkiny.

Pumpkin Pancakes

Don't get my 3 stars wrong - These pancakes tasted great! If taste was all that mattered, I would gladly give 5 stars. My complaint is that it's a 'heavy' pancake; very, very, dense and rich. I will make them again, but definitely when I am feeling the fall/winter bug, and I'm willing to compromise sanity for the hearty bounty of winter.

Coconut Macaroons II

Stuck to the pan so bad, I had to chisel them off. It left a terribly sticky mess. Also, the almond flavoring was too strong. I won't make these again.
