Pumpkin Pancakes
Don't get my 3 stars wrong - These pancakes tasted great! If taste was all that mattered, I would gladly give 5 stars. My complaint is that it's a 'heavy' pancake; very, very, dense and rich. I will make them again, but definitely when I am feeling the fall/winter bug, and I'm willing to compromise sanity for the hearty bounty of winter.

Thai Tuna Burgers
I changed this up based on what I had on hand. I used minced yellow onion in place of the green, jarred ginger & garlic paste in place of minced ginger root (I think garlic was a nice addition). I used dried cilantro and instead of bread crumbs, I used 1/2 ground almond flour, 1/2 whole wheat flour. Patties were loose when formed, but firmed up well while cooking. Really, Really liked this. I refrigerated mine and then sliced into strips for a salad later. Great flavor! I might try a bit of cayenne next time and soaking the tuna in coconut milk first.

Beth's Spicy Oatmeal Raisin Cookies
Yummy! I changed it up a little though. I used raw organic sugar, all butter, and then added 1/2 tsp nutmeg. I might cut the cloves next time as I'm not a huge clove fan and the flavor was quite strong. Good enough to take the place as my #1 oatmeal cookie recipe.
