Chocolate Lovers' Favorite Cake

Have made this cake many times...but I got everything together today and realized I didn't have an instant chocolate pudding mix. Used vanilla instead and told no one. No one knew the difference or mentioned anything about it tasting differently. SO! If ever you find yourself without a box of instant chocolate pudding to go into this cake...use vanilla!

Slow Cooker Salisbury Steak

Made this last night...didn't have time to do in the crock pot...but took a shortcut in the oven. It was delicious - my boys ate 3 each. I will add this to a regular rotation. Excellent - will try in the crock pot next time. Thanks for a great recipe! Served with hash browns and salad.

Cheesy Ranch Potato Bake

Probably not the most healthy side dish I could make, but my kids will eat it so I will cut waaay back on the butter and use a good homemade dressing. It was delicious. I topped with Panko breadcrumbs just to get it a little crunch (because my son like it.). Excellent recipe. I will probably add in some of the Oscar Meyer bacon pieces next time and shred in a little onion (because my son likes the taste, but not the texture.)

I've used this recipe numerous times...should have reviewed it before now. First time, I made as written and it was great. Second time, I doubled the lemon and garlic and added a bit more soy. Either way, delicious! Along with the pork, I skewered onions, bell peppers, cherry tomatoes, lemon quarters and mushrooms. Marinating 3-4 hours does the trick for my family.

Roasted Pork Loin

Very good! Used ingredients as written. I had a 4 lb whole pork loin...I did not butterfly it or cut/roll/tie it. I cut the slits in the top/sides of the loin, inserted the veg/herb mixture and baked for 2 1/2 hours at 170 degrees. When I got home from my son's baseball game, it had an instant thermometer reading of a perfect 135 degrees. I would serve this for company...but it was good for a Tuesday night! Leftovers for sandwiches, too.

Cajun Appetizer Meatballs

I love this recipe. I have never served it as an appetizer, but as a main dish over rice and over noodles. Both ways were a hit. I would suggest using a more vinegar-based BBQ sauce to cut the sweetness of the preserves. Delish!

Coconut Custard Pie II

Taste and texture are BAR NONE, the best I've ever had, much less made myself! I did have to cook the pie an additional 10-15 minutes at a lower temp (350) until the custard set. I will add a little more coconut to the custard next time, and I will make sure the pie is refrigerated for many hours before broiling the topping and serving. I enjoyed the topping *very* much. The brown sugar adds a little different flavor to a pie that can be "boring". Loved it!

Slow Cooker Roast Beef

Wouldn't change a thing. I've never cooked a roast that I didn't brown first...but this was fantastic. Reminded me of a good brisket. I used the leftovers for enchiladas. Fantastic! Thanks!!!

Sweet Zucchini Relish

I made 2 versions. First one was as written and it was really good...but a little too sweet for our tastes...would be great on a hotdog! 2nd version, I reduced the sugar to 2 cups, and added 5 finely chopped and seeded jalapenos. I will make this EVERY year. Easy prep...doesn't involve a 4 day process.. Great recipe!

Corned Beef and Cabbage

I gave this 4 stars because I did not stick to the recipe exactly. I did not use potatoes and I added a beef bullion cube to the water. My family has never eaten corned beef before (except for deli meat) so I didn't want to overwhelm them. I served with brown mustard and enjoyed this very much. I will definitely make this again.

Best Burger Sauce

Loved this...will make again. The rating is for the recipe as is. My personal taste is a little more "spicy", so I will substitute 1/2 Chioptle Mayo for the regular and chop up and add a few dill pickles. Adding my personal preferences will only make a good recipe better!

Golden Cheddar Muffins

This muffin was wonderful! Light, fluffy, cheesy... I will make 2 adjustments next time (and there will be a next time!). I will add a little more salt...and I will not use the pre-packaged shredded cheese. They I think they will be better with *good* cheese. I will make these often - everyone in my family LOVED them!

Blueberry Pound Cake

UPDATE: I have now made and "taken" this cake many times. EVERY TIME, it turns out moist and delicious. I did make a thin glaze out of powdered sugar and lemon juice last time and I believe this is the favorite! BETTER THE 2ND DAY. I made it according to the directions except I baked it in a bundt pan. I will make one change next time: Before adding the blueberries, I will spoon some of the "plain" batter into the bottom of the pan. Some of the blueberries in the very bottom stuck even though my pan was VERY well greased. I would take this *anywhere*!

Chocolate Crinkles III

Made as written. They tasted good, but I was used to the little "nugget" cookies and these flattened out incredibly. The bulk of the powdered sugar also "melted" during the cooking process. Again, they tasted good, but they were not what I was looking for. I will go back to the cake mix version.

Divinity

My first attempt - and it was completely edible! The only thing I did wrong was to start whipping my egg whites too early. I went back and read some reviews...if I'd started whipping about 220 degrees or so, it would have been perfect. A tiny stream of syrup is a must. I can see that now. Yum!

Jalapeno Snacks

Enjoyed by all. I used the last jalapenos from our garden and they were not hot at all...just good pepper flavor mixed with cheese and bacon...perfect. I did grill this batch, but have baked them and been very satisfied with the taste also. Excellent recipe!

Green Grape Salad

I made this recipe as written. Next time I will cut a little sugar from the sour cream/cream cheese mixture and possible cut down the amount of "sauce" because it was quite "saucy". These modifications are just my personal and family's preference - the recipe is wonderful as written! I did use green and red seedless grapes...and will again.

Wedding Cake Icing

Tried this today...was skeptical about adding half the sugar and mixing for 5-10 minutes, but it made for a very fluffy frosting, but still spreadable. Sometimes this type icing is hard to spread, but this was great. I think it has a very good flavor and not greasy. Looks great on my son's 2-layer birthday cake with plenty to use for piping (used chocolate filling, did not use the wedding cake between layers)!
