Creamy Potato Leek Soup II

I just made this, and it was great! I halved the recipe because I had only about 8 red potatoes. I used low sodium chicken broth and then added a small amount of salt to taste at the table. I also used half and half instead of heavy cream. It was very tasty and rich, although I think you could use low fat milk and it would still taste great. Follow the recipe as written as much as possible; definitely sauté the leeks before adding to the soup. YUM!!

Overnight Blueberry French Toast

I made this recipe as-written except that I used 1 pint of blueberries in the french toast and 1 pint in the sauce, which I think ends up being about 4 cups. Also, I thought the sauce would be too sweet for some family members so I served it on the side. Everybody loved this dish. The sauce is very sweet so some people used more than others. We will definitely make it again.

Romano Chicken

Excellent as written! My teenagers loved this, and I loved its simplicity. I don't know why anyone would choose to cook this in the oven instead of using the microwave. The benefit of this recipe, in addition to its wonderful taste, is the ease in cooking it. My kids will be taking this recipe to college.

Chai Tea Mix

My daughter and I just tasted this, admittedly skeptical how good it would be. Wow. Awesome. As good as anything I've gotten from any number of coffee shops. I made the recipe exactly as listed, grinding in small batches in a coffee grinder to get it powdery. We added 2 heaping tablespoons to a mug of hot milk and it tastes great. My daughter is going to give some to her friend, who is a chai fanatic, as a Christmas present. Thanks for the recipe.

Aunt Wanda's Turkey Carcass Soup

This is great! Everyone in my family liked it, and the kids wanted to take it to school for lunch the next day. I cooked it as is although I left it on the stove longer, and then seasoned to taste. Add more water and you'll have more broth. No need to add bouillon or broth; you are making broth! Leave the veggies in the soup. I don't know why you would strain out the veggies unless you just want the broth for some other recipe! You could add any vegetable you have on hand, although the recipe as written is fantastic!

Pasta and Beans

This is delicious as written. Not all Italian dishes are seasoned with basil and oregano. You certainly can add any spice you want, but this dish is great as written. I seasoned "to taste" with salt, as the recipe directed, but then put black pepper and parmesan on the table so this could be added. Definitely a kid-friendly dish. Make sure to use fresh tomatoes, not canned. Cook the pasta in some salted water, too.

Wonderful! The smell as it cooks makes you really hungry. My whole family loved it. Stick to the recipe, although you can cut the salt if you have to limit your salt intake. A "keeper."

Salmon with Brown Sugar Glaze

Excellent as written. Everyone in the family loved it. It is now my favorite salmon recipe- both for taste as well as ease of preparation. There is absolutely no reason to tinker with this recipe. No need to marinate, add seasonings, or otherwise alter this recipe. Thanks for the recipe!

Sicilian Garlic Sauce

This recipe is great, as written. I served it over hot thin spaghetti. I used 10 ounces of spaghetti to feed the family and used only about 1/3 of the sauce. It coated the spaghetti nicely. This is like using basil pesto on spaghetti; pesto is also not a cooked sauce. If you don't like garlic, then I would not make a "garlic sauce." If it seems too dry for you when you add it to the pasta, you can always save a little bit of the pasta water and add it to the spaghetti after you have coated it with the sauce. This is like many of the true Sicilian sauces that we serve in our Italian household. Yum!

Southwestern Turkey Soup

I made this tonight and want to say that everyone should make this as written! I did use fresh cilantro because I didn't have dried, and I love lots of cilantro, but other than that I followed the written recipe. It is great! It does not need corn or beans, but of course you can add them if you must, but the soup is very tasty and filling as it is. This is going to be a regular in my house. Even my picky son loved it!

Quick and Easy Chicken

This was great! I did double the sauce and was glad I did because I had enough to flavor the rice. My kids liked it too. I will definitely make this easy and GREAT recipe again. And the house smelled great, too. I never knew a recipe with ketchup could taste so good.

Teena's Spicy Pesto Chicken and Pasta

WONDERFUL as written!! The chili paste is a must. I found it in the produce section with the fresh herbs. Everyone in my family loved it, and we sent leftovers to school with the kids the next day. My son is notoriously picky, and he LOVED it. I will make this again and again. Thanks for the great recipe.

Tomato Pork Loin Chops

I cooked this recipe exactly as written, and it was great. If you drop ingredients, like the fennel, you do not have the same recipe anymore. I would suggest that you try the recipe just like it is, then alter it the next time if you need to. My whole family liked this one, even my picky 11 year old. Use fresh meat and it wont turn out dry, unless you cook it too long.
