Seven Layer Taco Dip

Sour cream, cheese, refried beans and salsa...what's not to like??? I did, however, omit the olives and cut back on the onion but that's just per my personal taste.

Aunt Millie's Broccoli Casserole

Very yummy! I love that it uses fresh broccoli and the sauce was very creamy. I've also made it before with added chicken breast pieces and served it over whole grain rice and that was very good, too. With applesauce or a side salad it makes a perfect meal!

Carrot Cake III

Delicious! I made this for Easter this year and everyone was very impressed. I did cut the oil by half and used unsweetened applesauce and it was just perfect...very moist and delicious!

Mexican Lasagna I

This tastes delicious and I love that you don't have to pre-cook the noodles! I did only give it 4 stars, however, because- like other reviewers- I think there is too much water in the posted recipe. I used a slightly smaller dish (8x11) and just 2 cups of picante (because that was all I had) and it was still pretty watery even with just 1 cup of water after an hour-plus baking time. (I do, however, realize now that the long baking time is more for water absorption than to cook the meat.) I served this with a salad and cornbread and my family just loved it. All in all, a great dish!

Cornflake Crust

I don't think I did, but perhaps I mis-measured something, because my crust came out horribly. There was too little to cover my standard pie plate with a nice thick crust and what was there did not hold together well. Too bad. My mom used to make banana cream pie with a cornflake crust when I was growing up and it was my favorite. She lost her recipe so I gave this a try. Oh well.

Microwave Oven Peanut Brittle

I had a hard time getting the right cook time on this recipe but that's user-error (and the user's microwave) rather than the recipe. I love the idea of making brittle in the microwave but I think I'll stick to the traditional cook-top way of making peanut brittle.

Salsa Biscuit Chicken

Yummy! I used drained, canned chicken breast and didn't sautee the onions so this was a snap to make. I heated up a can of refried beans and served it with a premix salad and we were eating in less than 30 minutes time! As others said, it does make WAY more filling than needed for one can of biscuits. I froze the extra to make this meal even easier next time!

Slow Cooker Pizza

Easy and excellent! I added chopped onion and mushrooms to adjust it to our pizza preferences. The reheated leftovers were just as good the next night, too!

Garden Veggie Pizza Squares

These veggie pizza recipes made with a crescent roll crust are always awesome- no matter how you tailor it to your liking. I followed this recipe but omitted the green bell pepper and added a little chopped cauliflower. I also sprinkled it with a little finely shredded cheddar cheese for extra color. No doubt this recipe would be great as is, though, too!

Gourmet Sweet Potato Classic

This is a fabulous sweet potatoe recipe. I've made it for my family a couple of times now and they just love it! Even my husband, who doesn't like sweet potatoes, will eat this. I gave it only four stars b/c there isn't enough of the delicious topping with the recipe as is. Double the topping and it's definately a 5-star dish!
