Caramel Apple Pork Chops

I used pork steaks because that was what I had- baked at 350. Pork was smothered in applesauce with sliced apples and brown sugar topping for half an hour covered, then 15 minutes uncovered. Once the pork was nearly cooked, put everything in a pan, added rum, molasses and cornstarch and let it reduce, put the pork back under the broiler until finished cooking. Delicioso!

Baked Pork Spring Rolls

I changed this up more than a little.. Bacon cabbage carrot garlic and red onions sauteed with crushed red chilis and ginger powder. Rolled them up and sealed it with oyster sauce (cuz I forgot it in the cabbage mix) and then into the oven until brown. Great starting point!

Creamy Rice Pudding

This was the first time I'd ever eaten/made rice pudding but it will NOT be the last! My family was almost disgusted by how much of this I ate- I could NOT STOP!!! I used short grain rice which made it extra thick= yummier! The butter was left out, a touch of whipping cream was added to finish off the pint before it went bad and I added extra vanilla and a bit less sugar per the other ratings. I'm extremely opposed to soggy raisins, so I added them afterwards. The cinnamon, however, is absolutely necessary! Soooo gooooooood!! AND!!! I thought the cold leftovers were (prepare yourself) EVEN BETTER!!! Thank you Erica!!!

Potato Skillet

My family has a tradition of making this most every morning after Sunday mass with whatever is in the kitchen. We start by browning bacon or pork sausage in a large cast iron skillet (also great with ham), then remove the meat and throw in an onion, red and green bell peppers (jalapeno if it's on hand, sometimes mushrooms) and potatoes. Usually seasoned with garlic and salt and pepper, sometimes some italian seasonings. Once that's all cooked up, add the eggs. When the eggs are nearly cooked, we throw in some cubed cheese (pepper jack is my favorite) and let it melt. Best served immediately with a side of toast and OJ!

Taco Pasta Salad

There really isn't much that can be done to improve this! I was worried about the dressing being too sweet, but it was not a problem. Next time I will sautee the onions with the beef. I made alot for a picnic yesterday, but half of it was gone before the picnic! To compensate, I broke up a bag of tortilla chips and mixed them in as well making it something like a taco salad. Rave reviews all around and no leftovers!

'Something Different' Fruit Salad

This is definitely something different! It was a great treat for a picnic down by the river! I used cantelope, watermelon, honeydew, grapes and strawberries but wish I'd left the strawberries out. The flavor was best with the melons. As others mentioned, it really does need to set so that it doesn't taste too salty.

Burrito Pie

So amazing! I added Jalepeno Jelly in one layer and it gave it a little extra kick. I agree with others that you really should layer the tortillas thickly and I think black beans would help it out alot as theh refried are missed. I made this for my boyfriend and I and was worried that since it made so much, we'd get tired of it right away and it would sit in the fridge forever, but it only took a couple days. And it was the first time he's ever asked me what was in. He was impressed :)Delicious!

Libby's® Pumpkin Cheesecake

Not too strong of a pumpkin flavor, I don't like pumpkin pie, but everyone loved this! I only used 1 8oz container of sour cream and used Pecan Sandy cookies instead of graham crackers in the crust. Everyone was raving! You won't have leftovers!

Sausage Applesauce Appetizer

WOW WOW WOW! This was spectacular! I used homemade applesauce and some of the Johnsonville sweety sausages and removed it from the casing before cooking it. Then threw in the applesauce and sugar and onion and cooked it. I wrapped it up in phyllo dough and baked it instead of baking it alltogether to make for an easier snack and had I not syopped my boyfriend, he would have eaten all of them! This will be getting made again soon! My mom's already requested that I make it for her after hearing my rave reviews. Spectacularly delicious!

Danish Pastry Apple Bars

I made a few small half pies by making circles out of the dough and then folding it in half around some of the filling. Turned our beautifully and taste great! came out short on dough and with lots of extra apple filling, so I cooked it with pork chops for dinner. Turned out better than inagineable!

Honey Roasted Red Potatoes
