Enchiladas Suizas

This is quickly becoming a family favorite! I simply put a spoonful of sauce on the tortilla, then filling and wrap. Once they are all in the pan, I pour the extra sauce and eye ball the amount of cream. Great recipe!

Sweet Potato Gnudi with Sage Butter

SO glad I tried these! Very tender, pillowy clouds of pasta. Everyone loved them. I made a large batch and froze the extra. Will be making these again!

Cherry Nut Muffins

I loved these muffins, after a few changes. First, I only made a half recipe. For that, I used 1 can of tart cherrries. I drained them first, then left them to drain more while I prepared the recipe. I used half whole wheat and half oat flour in the second batch, and they were better than with the all purpose!! Make sure you use a mixer to cream the sugar and butter, then add eggs. This gives a nice texture. Add the dry ingredients, mix till half incorporated, then add in the cherries. Mix just till incorporated. DON"T ADD THE MILK!! It will make your batter too thin. Then add a teaspoon of almond extract. These were so good I had to make a second batch the next day. I WILL be using this recipe again, as changed!!

Breadsticks with Parmesan Butter

My family loved these! Very tender. I added garlic powder and Mrs dash to the dough. Also had to add a bit more flour that what was called for. Will become a regular around here!

Beth's Peach-Nectarine Muffins

I loved these, and so did my kids! I did make a few changes. I made a double batch and used all very ripe peaches. I used half whole wheat and half whole oat flour. I added a very generous pinch of cinnamon and a couple teaspoons of vanilla. I will be making this again!!

Raspberry Cream Muffins

This recipe is amazing! I used close to double the amount of raspberries and mini chocolate chips. I just used milk, cause it was all I had. I will be making this on a regular basis. I made two batches today and froze them for busy mornings and toddler snacks. Thanks for sharing!

Cornmeal Bacon Waffles with Cheese Sauce

I really liked this recipe, but did things different. I seperated the eggs, and whipped the egg whites. That is the secret to any waffle recipe! Then, instead of bacon, I sprinkled the top of the waffle with chopped ham before closing griddle. They were so good!! Just make sure you spray the top of the griddle, as they wanted to stick a bit. Great base recipe!

Apple Scones

Overall, not bad. I added spices, and fresh it was ok. But, for me, the baking soda taste was too much. I am very careful with measurements, but I couldn't stand the taste of baking soda in these. After they were cool, it was even stronger.

Squash-Apple Bake

My family really liked this recipe! Even my husband and toddler. In fact, my toddler declared them num nums, and would not touch the rest of his supper! I followed another reviewers suggestion and chopped the squash, about a 1/4" cubes. I then peeled and cored the apples, and sliced them nice and thick. Otherwise, they would be mush by the end of the cooking time. Just enough sweet, and with added cinnamon, just enough spice!

Zucchini Pancakes

This was surprisingly good!! I omitted the oil, and had a little more zucchini, so I ended up adding more flour. I used whole oat flour, and spiced it up with cinnamon. I will be keeping this recipe for sure!!

Berry Good Coffee Cake

Overall, this had a really good texture and flavor. However, it didn't seem like there was much batter. I spread it all in the bottom of the pan, then topped with the raspberry mixture. I also added cinnamon to the batter. Good even without the glaze, straight from the oven!

Deep Dish Potato and Pumpkin Pie

I followed other reviews and omitted the crust. Also, used 1 cup pureed pumpkin, 1/2 pound of sausage, and one sweeet onion. We really liked this dish, will make it again!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

One of the best whole wheat muffins I have made. I used fresh strawberries, diced. Instead of applesauce, I used apple butter and left out additional spices. My son loved them too!
