Sweet Potato Souffle

I made this yesterday for the first time. I didn't think MY sweet potatoes could get any better. W-E-E-E-L-L-L I was dead WRONG! This casserole was the BEST! My husband (who in 30 yrs of marriage) has NEVER liked sweet potatoes, tried this and LOVED IT!! It's just 2 of us, so I scaled it down to 4 servings. I kinda winged it with measurements, omitted the coconut (only because I didn't have any) and added a dash of cinnamon to the potatoes. Give this a try. You won't be disappointed! Sweet Potato Souffle I

The only changes I made were: I omitted the coconut, and added a dash of cinnamon. The nuts I used were pecans. I scaled this recipe down to half, (there's only 2 of us). Other than that, I followed recipe to a T. Definitely a keeper!

Original Nestle® Toll House® Chocolate Chip Cookies

Perfect every time! I substitute 1/2 cup shortening for 1/2 c of the butter, lightly sprinkle sea salt on them as soon as they come out of the oven, and make sure your pans are cool when dropping dough on them! No more flat cookies! The shortening really helps, as butter melts faster than shortening.

The Best Lemon Bars

My son asked me to send Lemon Bars, having never made them, I came to my trusty site (allrecipes) to find a recipe and stumbled across this one. WOWEEEE!!! YUMMMMY! I took advise from a member and used the juice of 3 lemons and about 1 TBSP zest. They were out of this world! These will DEFINITELY be in my dessert rotation! Thank you for sharing!!

A-Number-1 Banana Cake

I don't even bother with banana bread anymore. This is my go to recipe when we have a hankering for something banana. I use 4 bananas, a little banana flavoring, and pure vanilla. 9X13 pan, 35 mins. have also substituted 2/3c sour cream in place of buttermilk. Both ways are great! I usually frost with cream cheese frosting, but used chocolate this time. WONDERFUL!!

Oatmeal Raisin Cookies I

I've made these twice. Turned out perfect the first time, the second time, they didn't have as much flavor, so I sprinkled them with cinnamon. (obviously I did something wrong) I'm getting ready to make them again. KEEP IN MIND.... this recipe calls for LIGHT brown sugar. Dark contains more molasses. I only ever have dark on hand, so I cut t with white sugar. I also used 1.5 cups of flour and added 1/2 tsp baking powder and 1/4 tsp cloves as others recommended. I always use my silicone pan liners or parchment paper when baking. Never an issue with stuck cookies! Bottom line.... A KEEPER!! Thank you for sharing, Darlene!

Chocolate Eclair Dessert

This is a quick and delicious dessert. I've been making it for years, and everybody loves it! The only notes I have to add are.... you'll need almost the whole box (3 pkgs) of graham crackers for nice even layers, and microwave the frosting for about 30 secs, stirring half way through. Other than that, leave it alone and enjoy it!!

Juicy Roasted Chicken

I made this today using a 7.3 LB chicken. It was very moist, but WAY TOO MUCH butter! I used 1/2 C. as directed. If I make it again, I'll use less butter.

Buttercream Icing

I used all butter, turned out great. I will try it with shortening next time just to compare. MAKE SURE YOU FOLLOW BEATING DIRECTIONS EXACTLY!! Otherwise you won't have a creamy texture. I use my kitchen aid mixer, SOOOO much easier. I love this as a base recipe to add my own flavoring to! Thank you for sharing!!!

Slow Cooker Italian Beef for Sandwiches

I grew up eating only the finest italian beef and sausage sands (Gary,Ind). This was great! I added some fresh cubanelle peppers, topped it with a lil marinara, and called it dinner! Definately a keeper!

Fudge Truffle Cheesecake

Made this once, using brownie mix. YUM!! I do suggest using parchment paper on bottom of pan. Makes things a lot easier. Other than that, this recipe is perfect! Very beginner friendly. Am making again using graham cracker crust.
