Apple Orchard Punch

Delicious! I made this for a bridal shower, and the ladies loved it. Beautiful color, and a really wonderful taste...not your typical punch. Will definitely make this again for special events. (Little tip--when making an ice ring, take into consideration the size of your punch bowl. My punch bowl was too small for the ice ring I'd made in my bundt pan, and I had to wait a bit for the ice to melt before I could serve the punch.)

Mama's Best Broiled Tomato Sandwich

Very tasty and quick! My husband and I loved the fresh taste. A good quality, dense bread is a must. Next time will try a mixture of tomatoes and roasted red peppers. This recipe is a definite keeper!

Oh, my! Very good! Reminds me of the first time I tried this dessert in New Orleans. Don't change a thing in this recipes, as it is perfect the way it is. Very impressive looking and tasting!

Zucchini Oven Frittata

I made this for breakfast when my husband's family was visiting, and they loved it! I used more eggs than the recipe called for--9 whole and 3 whites; five eggs is certainly not enough. Also, used three minced garlic cloves which added extra flavor for the extra eggs. Scrummy!

Strawberry Spinach Salad I

This is fantastic! I was the only one with an empty bowl (and four requests for the recipe) at an office pitch-in. Since then, I've practically drunk the dressing out of the bottle when I've run out of spinach. So healthy and satisfying. Very delicious salad, and one that will grace my summer table many, many times! (I use sugared pecans.)

Kay's Shortbread

Wonderful! I made the dough, wrapped in wax paper, and refrigerated over night. Next morning, sliced and baked for 14 minutes at 350 degrees. Perfect! Very tender and not too sweet.

Baked Oatmeal II

I make oatmeal every day but get tired of having to stand over the stove for ten minutes while it cooks. This recipe is a great compromise! I used a 12 ounce can of reduced fat evaporated milk in place of skim and cut the brown sugar in half (it's still plenty sweet). It reheats very well, even after a couple of days, and is as filling as a bowl of regular oatmeal. Thanks!

Apple-Raisin French Toast Casserole

This is very good, but it seems to be missing something. Perhaps next time I will tear the bread into pieces and soak in the egg mixture overnight, then put on top of the apples and bake. Dried cranberries or blueberries would be tasty, too. Great recipe for company or kids!

Amy's Spicy Beans and Rice

This is the ultimate desperation dinner--quick and easy with minimal clean-up. I used a mixture of black beans and kidney beans (do NOT drain the beans and bake uncovered) and added a healthy splash of red wine vinegar and three cloves minced garlic for a little extra flavor. It was still a bit bland for my taste, but that was easily remedied with some Tabasco. I only had Arborio rice, so the finished dish was quite creamy once I topped it with low-fat sour cream and cheddar cheese, but the texture and flavor were great! My picky husband was *impressed* and I had a really tasty dinner that provided enough left-overs for next day's lunch. Thanks for a great recipe!!

Winter Solstice Soup
