Jamie's Cranberry Spinach Salad

I have been looking for a recipe that is like a salad I have for lunch occasionally and I finally found it! This is fantastic. I did not use the poppy seed because I did not have them but it was still excellent!

Meatloaf with Fried Onions and Ranch Seasoning

This was a very moist flavorful meatloaf. My 12 year old is very picky and he even ate it! I added ketchup and fried onions on top for the last 10 minutes of baking. The only problem was that I increased the serving size to 10 and the recipe said to bake for 50-60 minutes and I had to bake approx. 75-80 minutes to get done all the way through in a 9x5 loaf pan. We will definitely be making this again!

Skillet Enchiladas

This is almost identical to a recipe my husband brought from his mom when we got married :-) The only difference is that I use corn tortillas, no taco seasoning, no water, 2/3 cup of milk, 20 oz of enchilada sauce, and add black olives. I dip each tortilla in hot oil for about 5 seconds on each side. I do not put any meat in the tortillas, only cheese and black olives and then put on top the meat for approx. 5 minutes after the meat simmers for 20 minutes. I then put more cheese and black olives on top. My family LOVES this!

Breakfast Bread Pudding

I have a family of six and no one really cared for this recipe. We ate it, but would not make it again. I added sugar, cinnamon and vanilla for extra flavor but still did not care for it.

Doreen's Ham Slices on the Grill

This recipe was fantastic! All my children loved it, even my picky 12 year old who complains about everything. Never would have thought to put ham on the grill, but it was sooo good. Didn't think I would like horseradish in anything, but the mix of flavors was really great.

Although this was very good, I also thought it was a little bland. Next time I will take other readers advice and add some italian sausage to kick it up a bit! Very good though, definitely a keeper.

Bacon Ranch Pea Salad

My husband and I loved this! The kids wouldn't touch it since it had peas in it, but that left more for us (haha). I made it the day before and ate the last of it several days later and it was still very good.

Slow Cooker Chicken and Dumplings

This was very yummy but the biscuits needed much more time than 30 minutes. Way to doughy this way. I cooked another 30 minutes and was still a little too doughy. I will try 90 minutes next time and see how that works.

Bacon Wrapped Smokies

I had these before and they were excellent. However, the recipe does not call for enough baking time and the bacon was to chewy. My family likes it crispier. Next time I will use broiler for a few minutes as other readers suggested and I know we will then give these a 5 star!

Rich and Creamy Tomato Basil Soup

I thought this was delicious, but I am the only tomato soup lover in my family. The only reason I am giving four stars instead of five is that it needed a little more flavor. I used 2 tbsp. freeze-dried basil instead of fresh and will add a little more next time along with some garlic powder as many other readers suggest. Also - as a word of caution - putting the tomatoes in the blender hot will cause the lid to blow off!! Maybe most people know this, I did not. My hand is burnt and the mess was not fun.

Salisbury Steak

Everyone in my family loved this! With 4 kids that is VERY hard to accomplish! However, I will definitely double the gravy next time as it did not nearly have enough for the steak and nothing for the potatoes.
