Garbanzo Bean Chocolate Cake (Gluten Free!)

My two year old son ate some of it but he really likes bland food! Very disappointing that it's rated high. Also it taste better cold than hot. The texture was fine, flavor missing. And I even added butter to the chocolate chips. I made this for healthy aspect but never gain. I hope I never have issues with gluten.

Soft Oatmeal Cookies

I loved these. I didn't have brown sugar so I used all white. My batter was really dry so I added applesauce and some milk until it was a moist batter. (2 tbs of each) I added 1/4 cup of coconut. Amazing! I don't like oatmeal cookies normally.

Zucchini Brownies

Texture was great. Smelled great. But not sweet enough like brownies. I didn't make the frosting because brownies shouldn't have frosting- but it just wasn't chocolatey and sweet enough for husband and I. I'm going to try this again. Maybe up the sugar or do the frosting. I have lots of zucchini to get rid of.

Banana Crumb Muffins

Good, topping was too sweet. Next time I'll make without the topping. I did sub the butter for vanilla yogurt and some applesauce. Tasty.

Lentil Chili

This is good! I tweaked it a little. 30oz of chicken broth. This made it super thick like a chilli. I also didn't put any meat in it. I cooked in a crock pot on high for a couple hours then on low. Also, it needs way more seasoning. I put in about 5tbs chilli powder, 3tbs cumin, and then some hot sauce. It tastes great!!! My husband (who will only it one specific chilli from the store) liked this a lot too! I will make it again, next time I'll add in the meat.

Banana-Zucchini Bread

I added an extra cup of zucchini. I only used 1/4 cup of oil, and subbed the rest with fruit puree. (left over fruit put in a fruit processor) I only used 2/3 cup white sugar. I didn't have cranberries or walnuts so I threw in some coconut. I actually cooked it in a large "brownie" pan (4 qt dish) vs. bread pans. I would make again! (but without coconut!) Very moist bread and not too sweet.

BBQ Glazed Homemade Meatballs

It has to much evap. milk in recipe. I had to add more oats to compensate. The meatballs tasted very bland and they burned on the bottom. Dissapointing.

Restaurant-Style Hashbrown Casserole

Very good! I didn't use any butter and used a half container of fat free sour cream. I used cream of mushroom instead of chicken. I crumbled up bacon in too. It was yummy!

The texture was wonderful. Taste not so much! It was too bitter. With butter and honey it tasted better. I'm thinking more sugar next time and perhaps less coffee? I used instant coffee because that's all I have.

Feta Cheese and Bacon Stuffed Breasts

Very good! I used the same amount of oil, but doubled the chicken. Very easy to make and tastes great. I didn't use sliced feta, just crumble. Will make again!

Mom's Zucchini Bread

I added an extra cup of zucchini, went 1/2 and 1/2 on oil and applesauce, and added nutmeg and a dash of cloves. I don't know if my cinnamon is old, but it didn't have enough cinnamon flavor to me. Very moist, great texture. I actual don't have bread pans, so I cooked it in a large casserole dish for 40 minutes and an addtional dozen muffins. I will make again.

Connie's Zucchini "Crab" Cakes

I only used 1/2 cup bread crumbs and cooked in the oven vs pan fry. I didn't have onions but I used garlic powder. "horsey" sauce on it makes it the best. yum! I liked it.

Cinnamon Rolls II

I halfed this recipe knowing my breadmachine couldn't handle 6 cups. (It can only cook two pounds max- and with three cups its up to the top of the machine.) Half still made plenty! I did sub one cup bread flour with whole wheat and added two tbs of flax meal to make it a little healthier. Tasted fine, but it cooked in 18 minutes since I made them smaller. First batch got browner than it should! I didn't like the frosting at all... next time I'll make a cream cheese frosting.

Refried Beans Without the Refry

I halfed the recipe, but still added more spices then listed. The texture was great, just like the Mexican resturants, BUT there wasn't alot of flavor. It tasted good with feta cheese and salsa in a burrito! It almost seemed like it needed cheese, cream cheese, or something to add flavor to the beans. This would be a good way to make a dip.
