Baked Bar-be-Que Chicken

A great way to make BBQ chicken inside. I did forget to cover it for the first hour so it wasn't fall off the bone delicious, but it still turned out really good. Thanks for the recipe.

Spinach Tortellini Soup

A super and easy quick soup. Elegant, too. It would be great for a first course for any dinner. I used 1/2 onion and 1 clove a garlic and sauteed first before adding broth. Boiled then added fresh spinach. Plus, I took other suggestions and cooked the tortellini seperate and then added them in. Omited both garlic powder and basil and it came out fantastic. Will definitely make again.

To Die For Blueberry Muffins

Excellent! The only change I made was that I added 1 tsp of vanilla. I did however have a tough time getting them out of the pans. I did grease, but next time I will use muffin liners as well as grease the top of the pans so that the tops will not get stuck.

Appetizer Chicken Kabobs

Super. The chicken came out perfect. The sugar in the marinade added a great crust on it which I think locked in teh juices. We added more veggies including pineapple and used these for a main couse. Thanks for a great recipe.

Sensational Sirloin Kabobs

I wasn't very happy with this marinade. I marinaded over night and the flavor took over the flavor of the beef. The taste of the soda was also kind of weird. Also, I didn't have garlic pepper nor have I ever heard of it so I used regular, but I doubt that had anything to do with it again. I probably will look for a different marinade if I choose to make these again.

Apple Loaf

This was a pretty good bread recipe. I added cinnamon, nutmeg, and cloves for some extra flavor as other had mention. I think I over cooked it, because it was a little dry. Next, time I would decrease the cooking time by about 10 minutes.

Chewy Chocolate Chip Oatmeal Cookies

My husband loved these cookies. I thought they could have a little more something, so next time I'm going to try to add a scoop of peanut butter. I didn't have the problem of flat cookies as other peopel mentioned, but I didn't follow the instuctions exactly. I wasn't paying attention and added all the wet ingredients (sugars, butter, egg, and vanilla) before creaming. Plus I took the mixer to high (got the switches mixed up) so I really had a fluffy wet mixture before adding the dry ingredients. The dough didn't seem wet enough. I thought that there might have been too much oats, but the results were excellent. I did cook them for about 14 minutes - since they didn't seem done at 12 minutes. I'll definitely make them again.

Rosemary Mashed Potatoes and Yams with Garlic and Parmesan

I think this dish is perfect, however I alwasy double the garlic (love the roasted garlic) and double the butter (unhealthy but extra creamy). I don't add extra water and am light on the milk. Plus use fresh rosemary and dice very fine so that it is soft and just the flavor (not texture) comes through in the potatoes. Hope you enjoy as much as we do. Lighter than regular potatoes (the sweet potatoes) make this dish. A popular Thanksgiving dish!

Low-Fat Blueberry Bran Muffins

I love them, however my husband likes the very sweet box mix better. These are not too sweet which makes them perfect for breakfast. I used frozen berries which made them almost too moist. I also tried apples and that came out very moist as well. I think raisens are the best mix-in.

Corned Beef and Cabbage II

So much better than the boiled corned beef and cabbage. I added more water to the cabbage to help it not stick to the bottom of the pan (last year this was a problem). I also had no problem with foil, but I do see how an oven bag would make things easier.

Blueberry Pie

Excellent. However, I made it with Splenda and it did not melt like real sugar therefore the blueberries rolled around and were not stuck together. My family told me it tasted excellent, but looked like rabbit poop. Moral of the story - Use regular sugar!!!!!!!!

Easy Guacamole

If I could give this recipe 6 stars, I would. It is the best guacamole ever. I make if for my fiancé at least once a week for lunch or snack and he can't stop raving. Really good large avocados work best, and I use the small plum tomatoes. Also, I skip the garlic because there is such a little that it is hardly noticable. Perfect!!!! Try it once and you will be hooked.

I think these are better than the sausage stuffed mushrooms. It doesn't need so much butter and skip the cheese at the end and then they are perfect.
