Chef John's Caramel Apple Pie

I have tried several apple pie recipes (including Grandma Ople's) only to be disappointed...until this one! I followed the advice of some other reviewers and did a thing or two from my own experience. First, Cut the apples into 8 pieces each. I use 5 large or 6 small/medium Pink Lady or Cripps Pink apples. Second, make sure the sugar mixture is cooled off. I prepare the mixture first, and cut up my apples while it is cooling. Then simply toss the apples in the mixture before pouring them into the crust. Once the lattice top is on, brush the crust with 1 beaten egg, and then evenly sprinkle 1 tablespoon white sugar over the crust. This is finally a go to apple pie recipe for me!

Missing Instructions About Boiling! This recipe is awesome. It has just the right amount of spice, and has become a new favorite around my house. The instructions left out that you need to bring your rice mixture to a boil before covering it, turning on low, and simmering for 45 minutes. If you do not bring it to a boil first, this will take more like 2 hours to cook. Even with bringing it to a boil, it takes more like an hour, just like it does when you make brown rice by itself. Other than that, this is a great recipe!

Chicken Florentine Casserole

Awesome! I would use two bags of spinach for a total of 12 oz. and then 8oz. of mushrooms. Otherwise there isn't much substance besides chicken. Definitely follow the reviewer's advice to sautee raw spinach with the mushrooms, and put the chicken in the casserole uncooked.

Venison with Sherry-Mushroom Sauce

I had to make a few changes based on previous reviews and my own experience, but it was so worth it. This is the best recipe I have found for tenderloins or backstraps. I used 2 pounds of backstraps (to make enough for a family of 4-6), 16 oz. of mushrooms, 1 large onion, and then quadrupled the sauce. Yes, quadrupled (remember, I about doubled the meat). The first time I made this, I doubled the sauce, and had to make more at the last minute. It was incredible. My family and in-laws (all hunters) raved about this recipe even when we ate the leftovers. With these minor changes, this recipe is AWESOME!!!

Awesome Slow Cooker Pot Roast

This is an awesome recipe. I used venison roast. When I seared the meat I seasoned with Lawry's Seasoning salt, garlic, pepper, and rolled in flour. I also added 2 jars of sliced portabella mushrooms, celery and onions, used 8 oz. beef broth and 1/4 cup red wine in place of the water, and cooked on low for 11 hours. Nice.

Mascarpone Stuffed French Toast with Peaches

Awesome!!! I double the recipe (except for the egg mixture - it makes way too much) and use the whole loaf of french bread. I cut it in half and then into the pieces. I also use three small bags of frozen peaches but only double the sugar. I doubled the mascarpone mixture since I cut the loaf in half to make the 1 1/4 - 1 1/2 inch thick pieces. Wow. This is incredible.

Chicken and Dumplings III

Absolutely loved this recipe. The recipe was perfect for someone who has never made dumplings. Everyone got seconds. Be careful not to add things like salt or garlic, as it will overpower the flavor.

Award Winning Soft Chocolate Chip Cookies

This recipe is very easily made into a healthy dessert that your friends will rave about. I am known for these cookies. I substitute honey for the sugar using the same measurements. I use sugar free pudding mix and unbleached flour without any chemicals in it. Even my friends who do not eat all that healthy absolutely love these cookies that they can feel good about eating.
