So delicious, but very rich. I use half butter and half olive oil. I think you could reduce the butter as well.

Red Lentil Curry

Good, but not a favorite. I did take a few liberties, like adding potatoes that I needed to use up and I didn't have fresh ginger, so I used dried. Maybe that's why it wasn't as fab as I expected.

Cheddar Cabbage Casserole

This got the thumbs up at our dinner table. I got impatient with measuring the cabbage, so I just shredded an entire one and used it and it came out fine.

Italian Zucchini Casserole

Bravo! I thought I would have left overs to take for lunch the next day. Nope, it vanished before my eyes. This is a winner. Kind of like a vegetable lasagna without the noodles. I didn't have fresh herbs and dried worked great. I used bread crumbs instead of stuffing as well.

Baked Shells in Sauce

My husband thought this was a 3 star recipe, but to be fair I added black olives, which I think overpowered things a bit. My 15 month old son, on the other hand loves this and gobbled it up.

Broccoli Noodles and Cheese Casserole

We give it 5 stars for its potential. It is rather bland when you take the first bite, but flavor develops after chewing. The great thing about this recipe is that it is a wonderful starting base where you can get creative with adding other ingredients to give it more flavor. Our toddler was a fan.

Pasta with Gorgonzola and Sweet Onion

Recipe requires almost double the sauce than called for. Very rich and good, but not great. I added sun dried tomatoes to help it out, but you could get creative w/ other ingredients and I bet it would be nice. Probably won't make again.

Yum! Made this for a party and it was a hit. I like that there's only a little sugar unlike some other recipes. I used olive oil instead of grapeseed oil.

Thai Curry Tofu

Excellent recipe! I prepared this a bit differently and it came out great. Will definitely make this again. I sauteed onion and garlic in olive oil, added drained tofu and squirted some Braggs Amino Acids on top instead of salt. Sauteed some more while I chopped some broccoli and butternut squash. Added veggies, coco milk, curry powder, cilantro, salt and pepper and simmered for 15 min. Served over rice. Delish! Didn't have any curry paste or seasoned salt and didn't miss em.

Quinoa and Black Beans

Great recipe! A little spicy for my toddler, but plain yogurt cooled it down nicely. Will make again fo shizzle. UPDATE: I add fresh lemon or lime juice and that really makes the flavor fab. Everyone loves this.
