Potato and Broccoli Casserole

Reviewed: Feb. 15, 2011
This was a good recipe! A really nice warm recipe for winter. The sauce sort of makes a gravy. I used 1 can broccoli and one can cream of celery soup because that's what I had on hand. I also substituted plain yogurt for the sour cream and used multigrain saltines. Very pleasing dish. Nothing bad to say about it, just a good recipe.

No Bake Choco-Peanut-Oatmeal Cookies

Reviewed: Feb. 1, 2011
couldn't get these to set properly, very sweet but still yummy. Next time I would do less sugar at 1.5 cups, 2 tsp vanilla, 4 Tbls peanut butter and boil for 3 or 4 minutes.

Haddock Marinara

Reviewed: Dec. 2, 2010
Great recipe. Well received by the family including our toddlers. I didn't have stewed tomatoes, so I skipped it and also used less sauce as the recipe submitter suggested. Topped w/ mozz and Parmesan cheeses. Next time I might try just Parmesan. Served over linguine with a spinach salad for a great meal.

Caramelized Spicy Pumpkin Seeds

Reviewed: Nov. 2, 2010
Totally tasty! My whole family liked them including my 18 month old. I didn't find these to be spicy at all, but a very nice blend of flavors with the spices. I might try a bigger pinch of cayenne next time. I followed other reviewers suggestions and cut the sugar by 1 tablespoon. There was plenty of sugar without it.

Blueberry Crisp II

Reviewed: Jul. 15, 2010
Yum, so easy and delicious. Fresh blues are amazing, but I'm sure frozen would work, too. I didn't have quite enough mayo and substituted with some coconut oil and it came out great. Next time I'll add crushed walnuts.

Easy Chocolate Chip Cookies

Reviewed: Dec. 24, 2009
For such a simple recipe, these are great cookies. While these are not the very best cookies I've ever had, they are excellent tasting when you consider how easy and kid friendly this recipe is. I forgot the vanilla and didn't notice. I used another reviewer's recommendation and used Pillsbury yellow cake mix. I also followed advice to cut the chocolate chips to 1 1/2 cups and it was a good ratio, but like one reviewer said, "Is there such a thing as too much chocolate?" Would like to try adding chopped walnuts next time. I baked on 2 different sheets - a non stick and an aluminum insulated sheet. They came out much better on the non stick sheet and seemed to fall apart a bit on the other one. Perhaps this is why some reviewers have had trouble w/ this recipe?

Browned Brussels Sprouts with Orange and Walnuts

Reviewed: Nov. 25, 2009
I love this recipe! Using fresh brussel sprouts requires more cooking time than stated. Also, the orange juice reduced before the veg was tender enough, so I added some more and covered the pan to steam them a little bit. Someone's review mentioned that they sprinkled a little blue cheese. I didn't try this, but think it would go nicely and will try this next time.

Easy Peach Cobbler

Reviewed: Oct. 7, 2009
I had fresh peaches that needed to be used up and followed what another review suggested and the family loved it with vanilla ice cream. It was very similar to a blueberry cobbler recipe I have made. I think you could substitute any fruit. Melt one stick of butter in an 8 x 8 pan, mix 1 tsp of lemon juice with 1 cup of sugar and about 4 cups of peeled, pitted sliced peaches (5 peaches) together; put this mixture on top of melted butter. Sprinkle cinnamon to suit your taste over top. Then mix together 1 cup of flour with 1 cup of sugar and 1 tsp of vanilla and 1/2 cup of milk. Place this topping all over the top of the peaches. Do not stir. Let bake at 375 degrees for about 45 minutes.

Loved this one w/ a reviewer suggestion to add a can of sliced water chestnuts! I put the onions on top only from another review and thought this was a good suggestion too. After all, we love the onions for their crunch.

Harvest Patties

I so wanted to like this recipe especially after all of the hard work grating the veggies, but it was a bomb. Total bummer. My husband described it as cardboard like in flavor. I think it has potential with mega modifications, but it is really missing something. Salt for starters.
