Turkey Meatloaf and Gravy

I loved this recipe. I did not have time to make the gravy, so this rating is based only on the meatloaf itself. I did find it to be spicy from the cayenne, but I happen to like spice. Mine needed a bit more breadcrumbs. I used turkey sausage instead of chicken. I minced all the veggies in a food processor. Instead of placing in a bread pan, I formed a free standing loaf in a baking pan. It cooked for 60 minutes total. It was alot of work although it was worth it. If you are like me and love something different with unique flavors, this recipe is for you.

Pesto Shrimp Pasta

Very tasty, quick and fresh! I used a small chopper/mincer, so my sauce was not smooth at all. It was watery as previously stated in other reviews, but I did not mind. I substituted 1 cup sliced mushrooms and 1/4 cup frozen peas for the asparagus. I used only a pinch of red pepper flakes and whole wheat Rotini instead of spaghetti.

Baked Salmon II

YUMMY! I liked it as is, but liked it even more when I reduced the oil to 4 tablespoons, I used thin fillets, and baked for 15-20 min at 400 in the marinade. I added some chopped green onion and blanketed the salmon with lemon slices...I think these changes sent it over the edge of good to great.

Zucchini Provencal

YUM, YUM, YUM! Used two small zucchini's and an extra garlic clove. I did not have green pepper so I omitted it. I let it cook twice as long for a less crisp zucchini. I mixed the parsley in at the end and probably used more than 1 tablespoon of parmesean.

Thai Green Curry Chicken

Love this dish. I took the advice of others and used boneless/skinless chicken thighs instead of breasts. I also used only one can of coconut milk + the balance in chicken broth to make the 2 cups. Reduced the sugar(used palm instead of white) a little, and added a pinch of coarse salt. I also added cubed/peeled chinese eggplant and sliced carrots with the coconut milk. And stirred in torn pieces of chinese basil at the end.

No-Cream Pasta Primavera

This was really tasty - I loved the fact that the veggies were roasted in the oven. I did not have fresh herbs on hand so I used only dried. I am sure the fresh basil would have given it a different flavor. I was very satsified for a easy healhy meal in just 30 minutes.

Zesty Red Potatoes

Great dish - simple and always gets rave reviews. I sprinkle a few cloves of chopped garlic on top with some rosemary, black pepper and coarse salt. I omit the pepper flakes only because my family does not like spicy food.

What an easy, tasty recipe!!! I have been wanting to use cilantro forever. I loved the flavors and took advice from previous suggestions of using capers and chopped tomatoes.
