I used 5 lbs sweet potatoes (8 cups mashed). Heated 1/2 C butter (1 stick), 1 C brown sugar and about 20 lg marshmallows. Mixed together with 1/2 tsp cinnamon, 1/2 tsp nutmet, 1 tsp vanilla and placed in a 9x13 pan. Added a single later of small marshmallows and baked til marshmallows were browned, then added a second layer of marshmallows and browned again. Turned out beautiful & delicious and no butter floating around. I think next time I will heat marshmallow creme in with the butter/sugar sauce instead of whole marshmallows.
