Layered Chicken and Black Bean Enchilada Casserole

Made this dish tonight for dinner. Yummy. My only deviations from the recipe were: (1) used a large can of red enchilada sauce because that's what I had on hand; (2) added green onions that I wanted to use up; (3) used 12 tortilla's because I had a 13x9 pan; (4) shredded the chicken instead of cubed; and (5) baked the tortillas at 450 for 3 minutes each side as another reviewer suggested. Totally delicious and simple. Served with a side of corn. Can't wait for leftovers tomorrow.

Blender Pie

What a wonderful pie. I didn't know what to expect. Cooked mine in a pie dish and it fit perfectly. Cooked 10 minutes longer than directed to make sure it was thoroughly cooked and I was getting some nice browning on top. Loved that there was a bottom crust, custard in the middle and crunchy coconut top crust. All prepared in a single container.... the blender! Will definitely make again. Very unique!

Black Beans and Rice

This recipe is perfect as written but so versatile. I added white corn cut from the cob which added a wonderful crunch texture and a couple of fresh tomatoes diced for added color and flavor. I didn't have vegetable broth so I used chicken broth instead. Thanks for a tasty and healthy dish.

Cherry Salad

I just made this salad earlier today, as is. The overwhelming flavor that comes through is the sweetened condensed milk. I love cherries and the flavor is overpowered by the milk. Next time I will do as others suggested, and add cream cheese. I may add maraschino cherries as well. This recipes is so simple but needs adjustments for my taste.

Candied Sweet Potatoes

I used 5 lbs sweet potatoes (8 cups mashed). Heated 1/2 C butter (1 stick), 1 C brown sugar and about 20 lg marshmallows. Mixed together with 1/2 tsp cinnamon, 1/2 tsp nutmet, 1 tsp vanilla and placed in a 9x13 pan. Added a single later of small marshmallows and baked til marshmallows were browned, then added a second layer of marshmallows and browned again. Turned out beautiful & delicious and no butter floating around. I think next time I will heat marshmallow creme in with the butter/sugar sauce instead of whole marshmallows.

Grilled Italian Sausage and Peppers over Penne Pasta

I loved this recipe. Pan fried whole hot italian sausage in 1T olive oil til thoroughly browned, then set aside on paper towel to soak up grease. In separate lg skillet, sauteed green peppers in 1/4C olive oil about 10 min, then added onion for about 5 minutes more, then added fresh garlic until lightly brown. Added chicken broth and pepper and allowed to cook down to 1 C. Then sliced the browned italian sausage into 1 inch pieces and added to the sauce to heat through. Then added tomatoes, basil and parmesan to heat as well. Awesome sauce that just lightly covers your pasta with flavor. Yummy!

The Best Bean and Ham Soup

Dan loved this recipe. Cooked with pork bones but took them out when done cooking & added chopped ham. Next time, use meat from pork bones. Cooked the celery whole & tossed when dish was ready. Very good flavor. Served with Krusteaz Cornbread.

Rempel Family Meatloaf

Just made this recipe for dinner tonight. My husband loved it. Used ritz crackers and the entire packet of onion soup mix. Followed someones suggestion & put 2 slices of bread underneath to soak up grease. Worked great. Thanks for a great recipe

Italian Meatball Sandwich Casserole

This recipe is great! I have made this recipe numerous times and find that the crust is firmer when I use french sandwich rolls (approx 3-4 6" rolls). I think the extra crust from the rolls is the key to a great crust. Other than that, I follow the recipe to a T.
