Cooking lamb and chicken on a hot stone; dipping in a variety of sauces.
My cooking triumphs
Cooking "clean" and flavorful foods for my more exclusive clients who have very sophisticated palates. Perhaps - Chilean Sea Bass with Citrus Sauce, Corn and Jicama Salad; Meditteranean Couscous - to perfection!
My cooking tragedies
A Christmas Tree cake. The three was cut in concentric squares, each arranged in ascending order to form a tree. The cake was incredibly firm, heavy, and tasteless; the icing did not "flow" the way the recipe claimed; and it was so heavy, even 10-inch skewers couldn't keep it from falling over! Oy! What a mess! Auto-trash!

Lesley's Valentine Brownies with Raspberry Coulis
This is a very good couli; I added some sugar to make it a bit more sweet (I used it for a Vanilla Bavarian). To make it more presentable, I strained the hot berries in a sieve prior to adding the corn starch paste. This took out all the little raspberry seeds and made the sauce velvety smooth; just right for a very elegant dessert.

Matthew's Bearnaise Sauce
A super easy recipe with an incredibly beautiful result! Follow the recipe exactly and you'll have no problem recognizing the various cooking points of this sauce. I added a bit of fresh lemon juice to complement Steak Oscar - my clients' loved every drop of this luscious sauce!
