Cracked Sugar Cookies I

Reviewed: Jan. 13, 2010
Best sugar cookie recipe I've ever had! These cookies turn out similar to Mrs. Field's or Otis Spunkmeyer that you would buy at the mall. I would not use these for cutout cookies, but for a round sugar cookie, I will never try another recipe again.

Cheesy Ham and Hash Brown Casserole

Reviewed: Feb. 8, 2011
I brought this to my church and it was the first thing gone at a women's Bible Study, despite having calories listed! Everyone was going back for more and asking for the recipe.

Crispy and Creamy Doughnuts

Reviewed: Feb. 11, 2011
Fantastic!!! Just like I remember KK when I lived on the east coast. The only tip I have is to let the oil drain all the way before frosting them. If you want them cooked all the way through and don't have a thermometer for the oil err on the side of lower heat and cook them longer. The first couple I made were fully done on the outside and dough in the middle. So good I won't even try another yeast doughnut recipe!

Blueberry Cream Muffins

Reviewed: Mar. 16, 2011
Excellent- the only thing I changed was to use half blueberry yogurt and half sour cream, 1/2 brown sugar instead of all white.

Grilled Sea Bass

Reviewed: Apr. 8, 2011
Very good- I will make it again. Thank you! I tried making it without the added salt and drizzle of olive oil and it was 4 star without those. I could tell it would be better with the addition. We were happy with it topped with lemon juice as a healthier version, though.

Strawberry Pie

Reviewed: May 22, 2011
My whole family enjoyed this pie. I used a sugar-free crust and sugar-free jello to cut the sugar a bit and it was the best strawberry pie we've had. Thanks for the recipe!

Whole Wheat Blueberry Pancakes

Reviewed: May 30, 2011
These were excellent!!! The only changes I made were: I doubled the recipe and used 1/2 c unbleached bread flour with 2 c. whole wheat bread flour, used 1 T Splenda with 2 packets Stevia, and did use the extra 1/4 c of milk. With 1/3 c. scoops they were 107 calories per pancake and absolutely delicious!

Rick's Special Buttercream Frosting

Reviewed: Aug. 22, 2013
I have finally found my perfect BASE frosting recipe!!! Thank you Rick! :). I modified this to be a vanilla bean frosting by grating 1/2 bourbon-soaked vanilla bean, 2 full tsp of pure vanilla, organic cream (makes a flavor difference), and 1/2 c butter with the rest butter-flavored Crisco when I made an 8 serving batch. It was AWESOME! This is the first buttercream frosting I've found that is not too buttery or greasy. Can't wait to try it with cocoa, irish cream or kahlua!

Kentucky Biscuits

Reviewed: Aug. 18, 2011
Just what I was looking for- simple, easy, not greasy, and yummy! I didn't have buttermilk, so substituted milk and cream opf tartar. They probably would have been perfect with the buttermilk- thus 5 stars.

Bacon Wrapped Dates Stuffed with Blue Cheese

Reviewed: Nov. 8, 2011
These are awesome-i only wish they looked more appetizing. I cooked them on a roasting rack so they didn't taste greasy, and rolled them lightly in brown sugar. I made the mistake of not stuffing them fully enough with the blue cheese-- some of it melts out.

Shredded Brussels Sprouts

Reviewed: Nov. 8, 2011
This was delicious-- even those who don't like brussels sprouts liked it! The pine nuts gave it so much flavor. I didn't put in the bacon crumbles-- the flavor from the drippings was perfect.

Savory Pumpkin Casserole

Reviewed: Nov. 8, 2011
This was amazing- I used a pumpkin fresh from the garden so it did have a hint of sweet. I used monterey jack and parmesan cheeses since it was what I had-- I will do the same next time. Other than that, I followed the recipe exactly minus salt and pepper to taste rather than measuring it.

Pumpkin Butter

I will add more sugar next time, and again make with orange juice because I like the harvest flavor from adding cranberries and orange juice. A very good recipe with wonderful consistency. I used fresh pumpkin from the garden :)
