Caramels

Reviewed: Aug. 22, 2013
I made these for Christmas and still have people begging me to make more in August! All of my friends have tried to shortcut salted chocolate-covered caramels and say nothing matches these :). This recipe will be part of our Christmas tradition. Thank you for sharing!

Rick's Special Buttercream Frosting

Reviewed: Aug. 22, 2013
I have finally found my perfect BASE frosting recipe!!! Thank you Rick! :). I modified this to be a vanilla bean frosting by grating 1/2 bourbon-soaked vanilla bean, 2 full tsp of pure vanilla, organic cream (makes a flavor difference), and 1/2 c butter with the rest butter-flavored Crisco when I made an 8 serving batch. It was AWESOME! This is the first buttercream frosting I've found that is not too buttery or greasy. Can't wait to try it with cocoa, irish cream or kahlua!

Snickerdoodles I

Reviewed: Nov. 25, 2012
These are fantastic. I use about 2x as much cinnamon and sugar to roll them in, bake on parchment and a little longer for my oven but otherwise follow recipe exactly

Harvest Pumpkin Cupcakes

Reviewed: Oct. 21, 2012
These were fantastic! Fluffier for my cupcakes than my go-to Maine pumpkin bread recipe.

Cashew Raisin Rice Pilaf

Reviewed: Sep. 20, 2012
Awesome! I didn't have cashews, but pepitas worked really well, and left out the pimentos and peas.

Angie's Perfect Dinner Rolls

Reviewed: Sep. 11, 2012
I have found my lifelong dinner roll recipe! These are amazing. Be careful to look at how many one batch makes--- I did not and they came rising out of my bread machine! These also freeze very well before the second rise to make another day or share with a friend :)

Arkansas Green Beans

Reviewed: Sep. 11, 2012
These are awesome! My kids (3 and 5) finished their plates! I did use half the recommended amount of sugar and add a good amount of chopped sweet onion with some additional fresh garlic.

Rhubarb Bars

Reviewed: Aug. 2, 2012
Excellent! Kid-approved :) I didn't have enough rhubarb, so I used 1/2 blueberries. I also didn't have strawberry gelatin, but substituted cherry. This recipe is very versatile a I will definitely file it as a favorite!

Strawberry Muffins

Reviewed: Feb. 4, 2012
This recipe was great and I would make them again, but it did require a little tweaking (hence the 4 stars). It needed a little extra sugar, some vanilla, a sprinkling of cinammon, and a banana to add flavor as some other reviewers recommended. Thanks for the recipe!!!

Love it-- won't try another recipe :) I make it with fresh pumpkin from the garden.

Pumpkin Butter

Reviewed: Nov. 20, 2011
I will add more sugar next time, and again make with orange juice because I like the harvest flavor from adding cranberries and orange juice. A very good recipe with wonderful consistency. I used fresh pumpkin from the garden :)

Savory Pumpkin Casserole

Reviewed: Nov. 8, 2011
This was amazing- I used a pumpkin fresh from the garden so it did have a hint of sweet. I used monterey jack and parmesan cheeses since it was what I had-- I will do the same next time. Other than that, I followed the recipe exactly minus salt and pepper to taste rather than measuring it.

Shredded Brussels Sprouts

Reviewed: Nov. 8, 2011
This was delicious-- even those who don't like brussels sprouts liked it! The pine nuts gave it so much flavor. I didn't put in the bacon crumbles-- the flavor from the drippings was perfect.

Bacon Wrapped Dates Stuffed with Blue Cheese

Reviewed: Nov. 8, 2011
These are awesome-i only wish they looked more appetizing. I cooked them on a roasting rack so they didn't taste greasy, and rolled them lightly in brown sugar. I made the mistake of not stuffing them fully enough with the blue cheese-- some of it melts out.

Kentucky Biscuits

Just what I was looking for- simple, easy, not greasy, and yummy! I didn't have buttermilk, so substituted milk and cream opf tartar. They probably would have been perfect with the buttermilk- thus 5 stars.

Blueberry 'S' Pie

Reviewed: Jun. 3, 2011
I would not consider this a pie, but it was fantastic. It is more of a buttery cobbler. I used fresh blueberries, and coated them as other reviewers recommended. It was actually a little too buttery for me and I even cut out 2 T of butter. Next time, I will up the oats and cut the butter even more.

No-Sugar-Added Blueberry and Banana Wheat Muffins

Reviewed: Jun. 2, 2011
These were pretty good. My banana probably wasn't ripe enough and I added 1/2 c applesauce to make up for only one banana- so that could have been the problem. But, even after adding some almond extract, 1 T honey, and a packet of Stevia I thought these were pretty bland. I think it's a good base recipe, but I'm going to have to play around with it to see what it's missing. I'm hypoglycemic, so I'm used to cooking without sugar and I don't think that's the missing element.

Whole Wheat Blueberry Pancakes

Reviewed: May 30, 2011
These were excellent!!! The only changes I made were: I doubled the recipe and used 1/2 c unbleached bread flour with 2 c. whole wheat bread flour, used 1 T Splenda with 2 packets Stevia, and did use the extra 1/4 c of milk. With 1/3 c. scoops they were 107 calories per pancake and absolutely delicious!

Strawberry Pie

Reviewed: May 22, 2011
My whole family enjoyed this pie. I used a sugar-free crust and sugar-free jello to cut the sugar a bit and it was the best strawberry pie we've had. Thanks for the recipe!
