Mango Masala Scallop Skewers

You don't need the seasoned skewers for this recipe to work. Maybe they add some flavor, but we had plenty without them. I soaked plain skewers in wine and sprinkled curry powder on top just for fun. I used a bag of Coleson's Catch frozen scallops and ended up with about 8 skewers of food between the scallops, mango and onions. You could leave off the onions though, because they cook much much faster than the scallops and even burn. I didn't mind that crispiness, but if you'd rather leave them off the skewers and use them as a garnish after it's all cooked that would work as well. I also sprinkled the scallops with curry powder. I didn't have lime juice, so I just used 2 parts sweet thai chile sauce to 1 part reduced sodium soy sauce and tripled the recipe given to make lots of dipping sauce. It was and incredible dinner and this recipe is definitely a keeper!

Grilled Chicken Burgers

I'm giving this 4 stars because I don't think the ingredient amounts stated in the recipe are correct. I only used 1 pound of ground chicken, so theoretically I should've cut the rest of the in half, but there would've been WAY too much stuff in there for my liking. I added less than 1/4c of onions, maybe 1/8c red peppers, omitted the carrots, saved the tomatoes for a topping after they were cooked, and sauteed the mushrooms in a pan with EVOO, garlic powder and onion powder. If your chicken burgers won't stay together, you probably have too many veggies in them...add them slowly, cause you can always add more but it's hard to take them out! Also, if it's very mushy, just add more breadcrumbs. Our burgers came out perfectly and every bite was as delicious as the first. Will definitely make over and over again!

Bagels I

Soooooooooooo awesome! Living in the south, it's impossible to find fresh bagels. I tried to make bagels once before, but they didn't come out quite right. This recipe is amazing though, and i will make these bagels again and again!!!

Easiest Focaccia Recipe

Oh, this was so good and made excellent panini bread! I used 1 c all-purpose flour and 1 c wheat flour. I also added garlic powder, dried crushed rosemary, and italian seasoning to the sugar/water/yeast mixture right before adding in the flour. 10 minutes in the oven was just perfect. I love how easy and quick this was, especially since my Kitchenaid stand mixer did most of the work!

Black and White Cookies I

Tastes just like the black and white cookies at Einstein Bagels where I used to work! I cooked the first batch for 20 minutes and when the timer went off they looked overdone, so I put in the second batch for only 15 minutes just until the edges started to brown. Between the two batches, I prefer the one that cooked longer. The texture is just perfect. I am so thrilled to have this recipe now! The only thing I changed was to use dark chocolate chips instead of the bittersweet chocolate just because that's what I had on hand. I will definitely make these again!

Greek Pasta Salad

Good...but needed some help. I halved the recipe, but once I tasted it, I decided to add an extra 1/8c olive oil, 1/8c red wine vinegar, fresh ground black pepepr and 4 cloves of crushed garlic. That was the extra kick it needed. It was fantastic with those additions.

Pork Chops with Apple Curry Sauce

This was good, but lacked depth of flavor. I used 4 very thin pork chops, browned them for a couple minutes on each side, used 1c apple juice, 1c chicken broth and 2T curry powder. I only baked it all for 15 mins at 350...any longer and the chops would've been hard as rocks. The apples were amazing, but it still felt like it was missing something and I don't think the extra 1T of curry powder was it. If I make it again, I'll use 1/2c apple juice, 1/2c chicken broth...and I'd have to put some more seasonings in there, just not sure exactly what yet.

Honey Mustard Grilled Chicken

A-MA-ZING!!!! I used boneless, skinless chicken tenders, marinated them for a couple hours, then threw them on the grill and basted them. I also made an extra 1/2 a recipe to use as dipping sauce. It was fantastic!!!! Definitely a keeper that we'll make again and again!

Spicy Grilled Chicken

This was delicious, although I changed the recipe a bit. I was not in the mood to measure anything, but I ended up putting maybe a couple TBSP of olive oil, the juice from one lime (tried to get juice from a second, but I couldn't get any out, lol!), a very small amount of lime zest (couldn't find my zester and had to improvise), 4 cloves of garlic (because we love garlic at my house), some oregano, crushed red pepper flakes and black pepper, and omitted the salt. I marinated for about an hour-ish...then ended up cooking in a pan on the stove. It turned out fantastic, with just the right amount of spice and lime flavoring. :)

Peanut Butter Chicken Skewers

FAN-FREAKIN-TASTIC! I marinated the chicken in half of the sauce in the fride for a couple hours before grilling. I really should've basted them during grilling, but just didn't...but even so they were still great straight off the grill. If you just want a hint of flavor, do it that way--still very delicious, and would accommodate anyone who was weary about putting chicken together with peanut butter. Excellent either way. My boyfriend raved about this during the entire meal and said it was a keeper!

Yup, this was amazing. Just perfect. I used lady fingers one time and pound cake another time. I agree with everyone else about making extra of the coffee mixture...I quadrupled the mixture but still could've used more.

Grilled Marinated Shrimp

Not that this recipe needs another 5-star review, but it was so awesome that I had to say something. The only changes I made were to use only 1/4c of olive oil (I mean, it's good for you, but not THAT good), I used ketchup instead of tomato paste, and I only used about a pound of shrimp. My boyfriend RAVED about it and I thought it was just a great all around marinade. Will definitely make again!

Chicken Piccata I

I agree with the last reviewer that the flavors are "mild and mellow". It's got good flavor, don't get me wrong...you need that sauce too. Add extra wine to the sauce and let it boil and reduce down. It was good, not over the top fantastic, but it's a good, easy keeper recipe that was done in a hurry.

Hawaiian Chicken Kabobs

Well, they were good, but I couldn't really taste the marinade at all. Granted, I didn't use sherry, but other reviewers said they left that out and it was just fine. I only marinated for 1 hour--just ran out of time--so maybe that was why? They were still good, just not as good as I thought they would be. I won't use this recipe again though.

Caribbean Grilled Chicken Breast with Pineapple Salsa

I couldn't find the carribean seasoning, so I used the Baja Citrus like another reviewer recommended...it was ok. I love Paul Newman's pineapple salsa, so that's what I had in mind when I thought of pineapple salsa, but this is much different. I'm not a cilantro fan, but I gave it a shot since I have recently come to love many foods that I once thought I hated--but cilantro is just not one of those foods for me. I'll go with parsley next time. Prolly even toss in a can of diced tomatoes. My boyfriend loved it, I thought it was just ok. Nothing special.

Lentils And Spinach

Eek. This recipe was so bland. I followed it exactly and actually had to boil the lentils longer because they were so tough still. It would be better to cook the lentils first separately and then combine everything. The curry was a great and necessary spice, and helped a tiny bit, but I was embarassed that I made such an awful dish for my boyfriend (who politely poured BBQ sauce on it and scarfed it down).
