Best Spinach Dip Ever

Got great reviews & compliments on this dip (only thing I did differently was use canola mayo & light sour cream, & used 1/2 a 20 oz. bag chopped frozen spinach), other than that I followed it as is, why try a recipe, alter it and then tell someone what's wrong with it? I had people asking me for the recipe! I like this one much better than the "onion soup mix" recipe out there, especially the color! Thanks so much! (Am thinking of trying roasted, or diced red pepper in it next time just for something different).

Southwest Breakfast Strata

I used real eggs as I didn't have any "egg product" on hand. I also didn't have French Bread and since this was a Sonoma recipe (which focuses on whole grains) I used slices of whole grain bread. I also put in about 1 diced scallion. Made it up Saturday night, slept in Sunday morning, popped it in the oven....My fiance loved it. I topped it with a touch of salsa and lowfat sour cream. Pretty tasty with some sliced melon & a cup of tea.
