Scalloped Tomatoes
I use seasoned croutons for this recipe and layer everything in the casserole dish rather than cooking it on the stove top first --- with home grown tomatoes (especially at THIS time of the year, I have so many to use up!), this is delicious. I layer everything in the casserole dish and then bake it. Mix the salt, pepper, basil, sugar, dried onion, and some garlic powder together, then 1 layer of croutons, 1 layer of tomatoes, sprinkle half of seasoning mixture , 1 layer of croutons, 1 layer of tomatoes, rest of seasoning, 1 layer of croutons), melt the butter and pour over all, then bake. When I have it in the fridge, I also add some fontina and layer that on top of the seasoning. OMG, I'm making this again this evening, I'm hungry just writing about it!

Traditional Gyro Meat
I increased the salt to 1 tsp (as suggested by other reviewers) --- it is still not as salty as restaurant gyros meat (this is good!!!). I didn't squeeze the liquid out of the onion, and I added all of the spices and pulsed on the processor before adding in the meats. Left it in the fridge about 3 hours before roasting. Mine took a little longer than an hour in the oven, and I love the idea of baking it in a water bath --- this really cuts down on the crutiness of the loaf. I found a recipe on YouTube for "GyrosBread"! (at 3FDK8mZnMng) that are made fresh ---- WOW! I will put some of the meat and pitas into the freezer and see how that works.

Taco Seasoning I
I multiplied everything in this recipe by 4 (except salt and pepper I used 3 tsp ea) and keep it in an airtight container in the cupboard so that I always have some on hand. I purchase my spices on the Hispanic food aisle (lower price and better flavor). Great to have on hand for my "Taco in a Bowl"!
