Awesome and Easy Creamy Corn Casserole

Really easy and tasty. I did bake it for longer than called - about 55 minutes. And I have added canned diced peppers for a kick. Thanks!

Peanut Butter Chicken Skewers

I didn't have enough gas to grill these, so did them on the stove top. Turned out fabolous - even the kids loved them. I would have enjoyed a bit more spice, but it was perfect for the kids.

Oatmeal Peanut Butter Cookies

Absolutely delicious. My husband doesn't like PB cookies all that much, but loved these. They are light and soft - I did add more oatmeal, but otherwise followed the recipe.

Blueberry Crumb Bars

Fabulous - better than the bakery! Only change I did was to add some fresh pitted cherries (chopped up) to the blueberries. Thanks for this great recipe~!

Brooke's Best Bombshell Brownies

Fabulous! A lot of sugar, but if you're going to do brownies, do it. Only change I did was to use grand marnier instead of vanilla, because I was out of vanilla. Yum!

Baked Fresh Cherry Pie

Only change I did was to sub in grand marnier for the almond extract, because of a guest's nut allergies. Came together nicely - not too juicy, but enough to know it that these cherries were fresh.

Butter Tart Muffins

Wonderful muffin - ravished by my children and husband. I did make a mistake and put the maple syrup into the batter before baking. I realised the error and added more syrup to the tops when done. I think it gave it a bit more of a maply flavour than otherwise and it still turned out great.

Shrimp Alfredo Pasta

Really good! I didn't have any cheese product though, so I substituted with shredded cheese and some cayenne powder, with about 1/3 cup milk. Not sure if or how that would alter the recipe, but we all gobbled it up. the quality of the shrimp, as usual, probably determines how good this turns out. I used uncooked large frozen shrimp from Trader Joes - not tough or anything when served.

Chocolate Chip Banana Muffins

I didn't really follow the directions. I pretty much mixed all the wet ingredients together, added the sugars and finished with the dry ingredients. I replaced the yoghurt with milk since I didn't have any yoghurt on hand and used 1/2 pear sauce (also on hand) with 1/2 oil. The muffins turned out really well despite the changes.

These are probably the best muffins I've ever made. I too added some lemon zest and juice from one lemon. A few more blueberries might have found their way in as well.

This was fabulous! Extremely rich - Definitely add some fruit (yummy strawberries!) and I followed suggestions on here and used real whipping cream. Great for potlucks!

Pork Chops 'n' Pierogies

Best Carrot Cake Ever

I followed the recipe exactly, except I substituted raisins for the walnuts. This made 12 large muffins and 12 mini muffins for me. They were very tasty, but I would cut the amount of oil used and substitute apple sauce in.

Downeast Maine Pumpkin Bread

Wonderful bread. I did have to bake it for an extra ten minutes longer, but that was it. Extremely moist, good flavour. I tried it again, sprinkling coarse sugar on top before baking. Then once out of the oven, spreading cream cheese icing on it. It melts, of course, but leaves a thin glaze on it. Absolutely wonderful!

Brandy Flamed Peppercorn Steak

I hadn't prepared this recipe in some time, but did last night for valentine's. It's even better than I remember and the sauce is so tasty. Serve with rice or potatoes to soak up some of this savory sauce! I added mushrooms to the pan when the steaks are placed in, just because we love mushrooms.

Better Than Sex Cake II

I made 4 cakes using this recipe for a function, and every piece was consumed. A very simple recipe, which turns out very good. Rich and moist. Two words of advice -when slicing up the cake for the caramel to drip into, it works better if the cuts are a bit rough. Also, make sure the cake is completely cool before applying the whipped cream, or it has a tendency to melt a bit. (still very good though).
