Flatlander Chili

I have used this recipe for a few years now and it is an excellent recipe. The only thing I change is that I use ground turkey instead of beef (and use only 1 lb) and 4 cans of various kinds of beans because I love beans. Otherwise I keep everything the same, love it!!! I also make it in the crock pot.

Catherine's Spicy Chicken Soup

This is really delicious! I made it in the crock pot - I put everything except olive oil, corn, beans and sour cream in the crock pot. I used all the tomatoes and then poured in a little water and the rest chicken stock to fill the crock pot (leaving enough room for beans and corn). I used about half the chicken simply because my crock pot is too small for that amount of soup. I cooked on low for about 7 hours. I then shredded the chicken and added the beans, sour cream (low fat) and corn and let it cook for another 2 hours or so . I used frozen corn, pinto beans and fresh hot salsa. I also added some cumin and extra chili powder. In the future I will probably skip the peeled, whole tomatoes because I don't feel they add much. This would be great with rice also. This tastes like chili made with chicken and I love it! Great recipe.

Krystal's Perfect Marinade for BBQ or Grilled Chicken

This is a DELICIOUS marinade!!! I have made it a few times, the first time with no modifications - there was too much sesame oil for my taste, 2 tablespoons was way too much in my opinion. So now I make it as written but with just a DASH of sesame oil and it is perfect! I marinate the chicken overnight if possible and I usually bake it but grilled would be delicious too. I also crush the garlic in my garlic press rather than chop for more flavor. YUMMMMMMM!

Basil Chicken over Angel Hair

5 stars with changes: I made a few changes and this turned out so delicious. I sauteed onions and garlic in olive oil and browned cut up chicken in that. Then I added chicken broth, a can of diced tomatoes (with oregano, etc) and white wine and the other ingredients (I used 1 tsp crushed pepper instead of hot sauce) and I added some black pepper and a teaspoon of sugar (left fresh basil out until last 10 min). Then I let it simmer for maybe an hour. I used mini penne and mixed it all together and topped with shredded parm. DELICIOUS!

Sausage and Peppers for a Dozen

This was great. I use all hot sausage because I prefer it over sweet. I used just the sausage and peppers part since I was serving over pasta. I did everything except I only added peppers and onions for last 25 minutes of cooking and they were perfect (soft but still had a tiny crunch). If the veggies had been in there for the entire 45 minutes they would have been completely soft and flimsy and I don't like them that overcooked. Turned out fabulous!

Ronaldo's Beef Carnitas

DELICIOUS!!!! I followed all directions exactly except I used a 2.5 lb roast (but still used the same amount of spices as the recipe calls for). I also used 1/4 tsp garlic powder instead of cloves. I put it in the oven for 4 hours wrapped in foil, then at the end I shredded the meat, skimmed any fat off the juice from meat and mixed shredded meat with juice from meat cooking. We ate it as soft tacos but would be delicious in burritos or even plain! This turned out amazing and my husband loved it also plus it was SO EASY! If I were to make a 5 lb roast I would double the spices. This recipe will be a regular in our house.

Light and Fluffy Spinach Quiche

Thought this was great WITH changes: Sauteed onions and 2 cloves of garlic with fresh spinach for filling. Reduced mayo to 1/3 cup and used 5 eggs (after reading other reviews). With these changes 5 STARS!

Taco Seasoning I

Excellent seasoning!! I bought about 1 3/4 lbs of ground beef and the amount of seasoning in the recipe was the perfect amount - used it all and didn't need more. Delicious!!! 1 million times better than the packet seasoning in the store.

To Die For Fettuccine Alfredo

5 STARS WITH CHANGES: I only used 1 box (16 ozs) pasta, I used HALF the butter (this was plenty of butter I can't imagine using double that), 1 pint heavy cream, 1 clove fresh garlic chopped, dash salt and pepper, dash nutmeg. DELICIOUS!! (Kids loved it too)

Broccoli Cheese Bake

I think this is delicious! The only things I did different were that I sauteed the broccoli for just a few minutes (rather than steam as recipe says). I wanted it to remain nice and crunchy after baking so I decided to saute. It was turned out perfect and still had a nice crunch the next day when reheated. Also, I used a mexican cheese mix rather than swiss. Will make again! YUM!

Lime Chicken Soft Tacos

These had a great flavor but I think it would be much better with some sort of seafood like shrimp or fish tacos rather than chicken. Next time I may try them with seafood and see if I like it better that way. I added extra lime juice and used cilantro instead of oregano.

Brown Rice and Black Bean Casserole

This is delicious! Some changes: I used 1 cup of rice (white rice because that's what I had in the house) and used chicken broth instead of vegetable broth. I doubled the carrots, onions and cumin. I also threw in a clove of chopped garlic with the chicken and zucchini. Next time I may use 2 cans of black beans since I made more rice. I normally don't like zucchini but loved it in this! Healthy and tasty!

Baked Penne with Italian Sausage

5 stars with my changes: Used 2 cans of sauce because I used a little more pasta than recipe called for. I added in some fresh garlic and italian seasoning. I also used fresh mozzarella and hot sausage instead of mild. I threw in some fresh grated parmesan as well. Delicious!

Baked Haddock

Followed recipe exactly and it was DELICIOUS!! I used Italian style bread crumbs. I made a tartar sauce to go with it which was delicious. Next time I will serve with some fresh lemon wedges to squeeze over fish as well. Great recipe (and my kids loved it too)!
