This is the ONLY Key Lime Pie recipe that I'll make. It is perfect. I even tried it w/Lite Sour Cream and it came out teriffic. Instead of measuring out 3 cups of SCM, I just use 2 cans. Works just fine. Thanks Ann for this superb recipe. CathyRae

Hummus Layer Dip

Slow Cooker Chicken Taco Soup

This was really good and easy. I used a store-bought rottiserie chicken instead of putting the breasts raw in the crockpot. Also added 1 can chicken broth and 1 can of Rotel tomatoes w/green chilies. Served with nacho chips, cheddar and sour cream.

Asian Beef with Snow Peas

We enjoyed this recipe very much. However, you do need to double the amount of sauce. But don't double the amount of ginger or garlic. I also added one red bell pepper sliced in thin strips, one can of baby corn and one can of sliced waterchestnuts. Served over white rice. Thanks Marbalet for posting this delicious recipe.

Pork Chop Grill

I'm sorry, but, both Hubby and I thought these were bland. Followed the recipe exactly too. I was apprehensive with water being used as a marinade, but was curious to try due to the ratings of others. Sorry Marianne - just not for us. :-)

Roasted Salmon with White Wine Sauce

Made this last night. Sort of bland in and of itself, but once I added fresh mushrooms and some Parmesano Regiano cheese to the sauce - it was pretty good. Giving 3* on the original recipe.

Slow Cooker Chicken Stroganoff

Hubby and I both enjoyed this recipe. We added a variety of fresh mushrooms the last 1 hr. of cooking and served all over fresh homemade noodles. DELICIOUS AND EASY. I thought, if desired, you could add some frozen peas the last hr. of cooking too. And, for a more sophisicated palate, perhaps 1/2 cup white wine or Sherry.

Chicken Enchiladas

Red Enchilada Sauce

This was very good. Made exactly according to the directions. Only gave 4 stars because I thought it was a bit thin, but the flavor was yummy and perfect over the top of the Chicken Enchiladas by Julie Moutray on this site. Thanks for submitting Sal. I will definitely make again.

Horseradish Sauce

Blueberry Zucchini Bread

What a great change of pace from the standard Zucchini Bread. And a great way to use those fresh picked blueberries. We loved this recipe and will make every year. Great for breakfast and freezes well.

PHILLY No-Fuss Mexican Dip

YUM YUM YUM. Made twice and everybody loves this recipe. The beans are a nice addition giving this recipe some "bulk" and texture. The taco seasoning is just the right amount for the 8 oz. cream cheese. I used 1/3 reduced fat CC and you would never know. Really good, quick and easy. Thanks - will make often.

Toffee Caramel Bars

Only giving 1 * because these "cookies" are a gooey mess. There's really no other flavor than caramel. Might as well just eat a caramel. Sorry, not for me.

Peggy's Broccoli Casserole

Made exactly like the recipes states. I didn't like it at all - way too much "sauce" for such 20 oz. chopped brocolli. Giving 2* because hubby thought it was pretty good. I heated it back up the next night and used it as a topper for my baked potato. That wasn't too bad that way. I guess I prefer less sauce and more substance.

Stir-Fry Spinach Salad

DH and I both loved this recipe. Such a nice change from putting you stir-fry on rice and healthier too. I did use 2 pepper (red and green), added some sliced Vidalla Onion and a can of sliced Waterchestnuts. Delicious - It's a keeper.
