About this Cook
I am a retired Executive Assistant, 56 years old, love Jesus, Wine and Great Food. Married, no children and have 2 beautiful Golden Retrievers. Both my husband and I enjoy cooking and entertaining our friends. We love traveling with cruising being our favorite type of vacation. Get to see a lot of new places and sample different local fare.
My favorite things to cook
I don't have any one favorite thing to cook. I do enjoy putting together dinner menus so everything compliments everything else - and is pleasing to the eye. If I had to pick one thing I like to work with, it would have to be chicken. So versatile. And, I also enjoy doing "cooking marathons". I cook all weekend, freeze and share with friends. My motto is "If you're going to make a mess, make a big mess".
My favorite family cooking traditions
Making Christmas cookies with my Mom and Sister and listening to Christmas Carols and singing and harmonizing to our hearts content - and, of course, sampling the cookies. Really good memories.
My cooking triumphs
Hands down - Homemade Pesto Pasta Primivera with Grilled Chicken Breasts. Oh my - so so good. And, I make WONDERFUL Tomato Basil Cups.
My cooking tragedies
Pumpkin Dinner Rolls - YUCK. Couldn't get them to rise so they were like bricks. TERRIBLE. It was my first time attempting anything with yeast - I was 21 yrs. old, newly married and was supposed to take "the rolls" for Thanksgiving. It was pathetic, but, my family (all 25)were kind and tried to eat them anyway. It makes for a good laugh now.

Creamy Lentil Salad
This recipe is very good and fresh. I did use fresh Dill instead of the dried as called for in the recipe. I'll make this again.

Grilled Mahi Mahi in Thai Coconut Sauce
No mention in recipe as to what to do with the cilantro and green onion. I used as garnish when serving. With all of these flavorful ingredients, I thought this recipe would be power-packed with flavor. Not the case. Unfortunately, I found it a bit bland. Sorry, only 3*'s from me.

Absolutely Fabulous Greek/House Dressing
I scaled this recipe down to 10 servings. It is perfect. I only used 1/2 c. vinegar (used cider b/c I didn't have any red wine). It is a delicious recipe. Would also be great as a marinade for chicken - or even a sirloin.
