Spicy Stuffed Chicken Thighs

Great recipe, nice and spicey with great flavor from the tomatoes. I used stewed, only because I didn't have diced, but it was still great. I added just a few other spices (fennel seed, oregeno, and a little basil). I did brown them first with the onions and peppers for about 5-6 minutes, then baked everything together for around 50-55 minutes to 170 degrees. Will make again and recommend it highly!

Hearty Ham Casserole

This was very good, and was similar to the ham and potato soup recipe, just thicker. Family enjoyed it, and said it tasted like a "filling" for pot pie. You can add milk to left overs and serve it as a soup the next day for something different.

Chicken with Mushrooms, Prosciutto, and Cream Sauce

I gave this 5 stars, but did improvise on a few things only because it's what I had on hand. I used 4 chicken breasts, pounded thinner, and seasoned slightly with salt, pepper and fresh basil. I used prosciutto ham wrapped in moz. cheese, sliced. I sauteed 1/2 c. onion, 1 Tbs. garlic with the fresh mushrooms for 5 minutes. Put the prosciutto on top of the chicken, then layered the slightly cooked mushrooms, onions and garlic on top. Baked for 40 minutes and it was done to perfection. I omitted the sauce, only because of hungry boys waiting, and it was awesome just like that. I will make this again and I will make the sauce next time because it sounds so good that way. It received raved reviews by all.

Saucy Chicken Cordon Bleu

Made this recipe for the family, and my son said "I have to know how to make this!". The one most important trick is to prepare the chicken with bread crumbs at least 1 hour before browning the chicken. Just make ahead and wrap in plastic, put it in the fridge and let the bread crumbs have time to settle. This makes them stick when browning before baking. Delicious!

Delicious Ham and Potato Soup

Wonderful soup, and definitely easy to make. I also added more ham, the kids love ham, and didn't add salt. I took some others advice and threw in some left over corn and carrots, turned out perfect. It wont be around long, that's for sure. Thank you Ellie!

Slow Cooker Chicken Stroganoff

Wow! Couldn't believe the wonderful taste of this dish!! The kids ate it up! I used 1/2 package of onion soup mix instead because I didn't have the italian on hand, and threw the chicken breasts in frozen. Cooked 4.5 hours and pulled the chicken apart with ease. I will definitely be making this again and again. Thank you Judi!

Savory Chicken Breasts

This was an awesome dish! My kids absolutely loved it and it was very easy. I did add some of the ideas from others, like a slice of ham then cheese on top, and fresh mushrooms to the soup mix. Delicious!

Spinach Stuffed Chicken Breast

I have had and made many different stuffed chicken recipes with spinach, and found this to be equally as good if not better than most. I did use ham instead of prosciutto, but ONLY because I forgot it at the store! I will make it again with prosciutto, as that will be the perfect touch.

Chicken Florentine Casserole

This is a very tasty recipe! I also followed tips from other reviews (didn't precook the chicken), and I had to do a bit of improvising with canned organic mushrooms, frozen spinach (thawed and drained) and 6 pepper spice instead of the bacon bits, and it stilled turned out awesome. I will definitely try this again with fresh spinach and mushrooms, and add the bacon as suggested. Can't wait!

Barbie's Tuna Salad

I'm not a huge fan of tunafish, but this recipe sounded refreshing, so I tried it. My girlfriend was over and only wanted a half of a sandwich, until she tasted it...then She licked the bowl clean!!! Put a slice of provole and a garden fresh slice of tomato with it. It was great.

Broiled Tilapia Parmesan

My husband and I both thought this dish was delicious! I did use a bit of old bay, husband's favorite spice with fish, just a dash of paprika and a dash of bread crumbs on the top of the parm mix to help hold it on the fish. Awesome, we will be making this one again and again!
