Tantalizingly Tangy Meatloaf

I have to give this recipe 4 stars because I didn't read it properly and I added all the ingredients together ...substituted crushed pineapple for the pineapple preserves. However...this error resulted in the most amazing meatloaf ever !

Grilled Lemon-Pepper Zucchini

So Good!! I didn't have red bell pepper so I added some mexican salsa to the mix and I free handed the seasons to my taste. I put it in the oven at 350 for 40 mins and WOW... the taste is phenomenal. Thanks for sharing this!!

Good Old Fashioned Pancakes

These are really good. I added vanilla to my eggs and an extra 1/4 cup milk. For people who think they are too salty try not using salted butter. Salted butter should be used for baking or cooking in my opinion...its better to control your salt intake if you add it yourself.

Homemade Black Bean Veggie Burgers

So I give these 4 stars because I didn't have cumin. But I added spinach and carrots and cheese and an extra egg. Something is missing. I had pre cooked my beans because I didn't use the can ones and I even seasoned those with a veggie broth. The burger stuck together fine and maybe I left it on the George Foreman too long but it was a bit dry. I should have used cheddar cheese maybe. But they have a lot of potential. Not as tasty as the lentil patties I have made from this site but still pretty good. I will play with them to suit my taste next time.

Jay's Signature Pizza Crust

My first time making Pizza Crust. I was amazed because me and dough don't get along. It came out "the bomb diggity!!" I added herb and garlic to it the first time and the second time I made it as is. Great both ways. I bow to Ray for this recipe. Crispy on the outside and soft on the inside. Just perfect. Thanks!

Pumpkin Cake II

Sturdy Whipped Cream Frosting

This was a great frosting for my butter cake. I also used a berry filling with it and it complimented it so well. I did add a touch more sugar as I didn't want too much of a cream cheese taste and it was still not too sweet and not too cheese tasting either. I whipped it with a processor and it came out a great texture. Definetly holds up in room temperture. Will use this as a base recipe for a lot of my cakes if I don't want to do buttercream. Thanks.

Stuffed Guinea Squash (Eggplant)

This was an excellent meal and deserves 5 stars but I messed up and I added other ingredients. I forgot to add the breadcrumbs so I did it when I added the cheddar cheese to brown at the end of cooking. I also added parmesan cheese. I did not have any mushrooms so I used tomato. It was delish! My veggie husband was pleased. Looked good too.

Lemon Blueberry Drop Scones

Outstanding!! I only had 6 oz blueberry pomengranate flavored yogurt and I substituted the zest with lemon extract but these scones are so delish!! Not the normal scone texture but a delight to put in your mouth!!

David's Yellow Cake

Being the first yellow cake I made from scratch it is Delish!! I used All Purpose flour but deducted 4 tbsps. I then took time to beat the buter and sugar mixture as well as some suggested. It was by far the moistest yellow cake I have eaten. I will never use box cake ever!! The only thing is that my sides browned a bit too much at 25 mins baking time. But the cake was moist as can be!!! Thanks for the recipe!! My husband loves it.

Buttercream Icing

I did not have enough sugar but I see through some reviews that others used the same amount I did. I did not enjoy it as it tasted to buttery. And the texture was not to my liken. But again, I used less sugar and more milk and vanilla as per one review.

Lentil Cakes (Patties)

I must say that I will never buy frozen veggie burgers again. This were so good. I halved tghe recipe as my husband is the only veggie in the house but I did taste them. He ENJOYED them! I boiled lentils with a veggie cube and I put pepper instead of poultry seasoning. I also used oatmeal instead of the wheat and barley cereal. Left out walnuts but added some bread crubs to the mixture as well as rolled them in it. YUMMMY! This recipe will stay around in this house!

Lentils with Tomatoes

I thought this dish was quite tasty! I used veggie boullion cubes to boil the lentils and I didn't boil them long because I didn't want them to be mushy. I sauted onions with garlic and carrots and added fresh tomatoes. I didn't have green peppers and didn't miss them. I added pepper no salt as the boullion cubes are salty enough. I then put them all together and cooked for about 10 minutes. The flavor is great! Now the test is if hubby and children like it!!

Maple Salmon

My husband loves salmon. But unfortunetly didn't care for this dish. I didn't either. I couldn't get the idea of maple belonging on pancakes. It was too sweet for me for salmon.

Rice and Lentil Casserole

Maybe because I omitted the sausage(husband vegetarian) that it was bland to me. I followed the suggestion of other reviews and cooked the lentil seperate adding them at the end. I used green peppers, onions but added carrots and I used a par-boil rice. It was an okay dish but at the end the taste was a bit washed out to me so I seasoned it with salt, pepper, thyme and paparika. Otherwise it is a good base for a lentil and rice recipe.

Beth's Spicy Oatmeal Raisin Cookies

MMMMM....mouth is stuffed with cookie as I type! Yummy. I used all butter and subsituted ginger for the cloves. Delish! Can't wait until my DH tries them...if there are any left when he comes home :)

Bermuda Fish Chowder

The flavors come through great! I am Bermudian but live overseas and this was a walk down memory lane. I only had Cod fish not snapper and I used Vegetable Broth instead of Clam juice. Also I added plaintains, dasheen, cassava, yams, corn on the cob and sweet potatoes to give my husband a little flavor of his guyanese heritage(he loves metem-gee). Excellent!! Thanks for sharing!!
