Moroccan Cooked Pepper Salad

If your tomatoes are large; add extra bell pepper. Also, a very meaty tomato such as roma might be better.

Sac Valley Grilled Pork Tenderloin

Garlic Chicken Fried Chicken

My first ever fried chicken and my family all enjoyed the flavor. I do need to work out the oil temperature a bit though becuase my breading was very dark brown by the time the chicken was cooked.

Spanish Rice Original

It was getting a bit dry before the rice was fuly cooked; but loaded with great flavor. I will add extra liquid in the future (high altitude).

Pork Empanadas

Good; would like the filling a bit more flavorful, and the crust was dry (perhaps a high altitude issue). We will make them again with larger crusts and perhaps a bit of water added to the dough during mixing.

Basque Cake

Made this as dessert for a Spanish themed experimental dinner party with my neighbor. Everyone raved, it was so flavorful and moist beneath the crisp top crust. I was surprised that the cream filling was completely absorbed by the cake, but it was even better I think without the expected filling layer.
