Mie Goreng - Indonesian Fried Noodles

This was fantastic! I substituted beef for chicken. Because stewing beef was all I had on hand, I cooked it in the pressure cooker (about 10 minutes, then let sit until pressure released) with a bit of water, a teaspoon of vinegar (to soften) a few teaspoons of soya sauce, lots of black pepper, and a whole head of crushed garlic. Then, did the remaining recipe as listed, just substituting broad rice noodles for the ramen due to allergies (and cooking the noodles in the remaining "beef water"). Even my picky kids, after commenting that it was colourful (a bad thing, in their eyes) due to the broccoli, carrots, and purple cabbage (what I had on hand!), both had second servings.

Fiery Red Pepper Potatoes

I was looking for something quick to go with some rice and chick peas I had on hand (based on the Spiced Quinoa recipe found on this site - made with rice instead of quinoa). This fit the bill. I had to add a little water after frying the potatoes and onions (no green onions on hand, so I used one small onion). When potatoes were cooked through, I let the liquid evaporate then added the remaining ingredients (increasing both the cayenne and soya sauce as other reviewers noted). A winner for all the family - even my kids who are not big red pepper fans.

Tex-Mex Quinoa Salad

Fantastic! I followed another reader's suggestion, and did this as lettuce wraps. We ditched the avocado because we don't care for it, used fresh tomatoes in place of canned, and added a few cucumbers and some fresh mint. Also cooked the quinoa in chicken broth, and added a teaspoon of fiesta lime seasoning.

Pasta Fagioli Soup II

Yummy recipe! I made it vegetarian and used fresh ingredients - one kilo fresh cranberry beans in place of the canned beans, fresh grated tomatoes in place of the canned, fresh spinach - one large bunch, chopped and added at the end of cooking time. Also used rosemary, fresh parsley and left out the bacon, adding a bit of freshly grated parmesan. Okay, sounds like a whole new recipe - but it was delish!

Megan's Granola

As many have said, a wonderful recipe. Don't leave out the oil. I don't think oil-free granola would be very tasty, since that is that helps it to "toast". However, I use far less than the recipe calls for - my basic rule of thumb is 2 T of oil for every 2 cups of oats. I whisk the oil into the honey (1/4 cup per 2 cups - because I leave out the brown sugar and maple syrup, but you could use as written) then make sure the granola is coated. You still get a nice toasty result, but with less fat.

Moussaka Cottage Pie

This was absolutely wonderful. I used fresh mashed potatoes (about 7 medium) and fresh diced tomatoes (5 medium) and left out the raisins. Needed a fair bit of salt, and put in some Montreal chicken spice as well - phenom.

Peanut Butter Balls I

Wonderful recipe. I didn't have cherries so substituted raisins. I'm going to try them again today with craisins. Also, for half the batch, I dipped just one side of the ball in chocolate and coconut. Made for a nice varied appearance and decreased the richness slightly. I'm going to try half in white chocolate today.

Slow Cooker Pork Chops II

These were truly phenomenal. I didn't have garlic, so replaced both the garlic powder and the garlic with garlic salt. Replaced the poultry seasoning with some crushed rosemary, a dash of nutmeg and some freshly ground black pepper. I also added some whole shiitake mushrooms which came out almost tastier than the meat! Once the pork chops were cooked, I removed them from the slowcooker, added a bit of cornstarch mixed with cold water and cooked on high for a minute or two until thickened. Sauce was delicious over whole grain rice!

Sausage and Spinach Soup

This was a tasty soup, but a little too "spinachy" for the non-spinach lovers in my family. Before reheating it the second day, I added finely cubed potatoes cooked in about 2 additional cups of chicken broth, and the flavour was much improved.

Black Eyed Susan Salad

I made this for a Christmas potluck, so replaced the red pimento with one red and one green pepper, chopped. It was a bit too sweet for my liking, so I increased the Worcestershire sauce, added about a tablespoon of salt (used a clove of fresh garlic in place of the garlic salt), ground lots of black pepper and added half a teaspoon of crushed red chillies

Mediterranean Lentil Salad

The first time, I made the recipe as written, and it was a 3 1/2. But since then I've made it just cooking the lentils, and putting everything else in raw, and we're enjoying it much better! It's nice served on a bed of lettuce.

Tuna Italiano

We just finished eating this (with modifications), and everyone - kids included LOVED it. I sauteed leeks (finally chopped in the processor) and 3 cloves of garlic in a bit of olive oil, added one can of tuna (no oil), the garbanzos, olives and spices, then finally a package of Knorr cream of mushroom pasta sauce and the required two cups of water with grana padano cheese. Delicious!
