Whole Chicken In a Pan

This is also wonderful on the grill! I use 2 foil covered bricks. I like to brush w/equal parts grape seed oil and w'shire sauce and lemon mixture when I grill it. The best lesson I learned when cooking chicken was being told presentation side down first!

Coffee Shake

I've been doing this for years. I don't use vanilla or chocolate, but use splenda and instant expresso like Pilon or Cafe Bustelo. Unless it's really cold outside, this is my Florida wake up! I use Almond unsweetened milk as I'm diabetic.

Cuban Ropa Vieja

In the frozen mexican food section there is a cool whip size tub of recaitos that makes cooking this much easier. Recaitos is cilantro, lime, cumin and other authentic flavorings. I use it when making homemade salsa!

Potato Salad I

Red potatos are perfect for this. The little tiny ones you can half or quarter. I leave out the mustard and add sour cream and chopped green olives. Adding a little olive juice gives it another layer of flavor too.

Chicken Scampi II

Alot like a famous New Orleans shrimp thing. Olive oil, butter, herbs, sea salt/pepper and shallots, lemon juice then a nice dry white. Half lengthwise a GOOD baguette, tear out the middle and serve stuffed with mixture. Look out Muffeltta!!

Skip all the carb/sodium overload with the Rice A Roni and make with Cous Cous instead. A Lovely salad, the mint from the cous cous mix really adds the missing flavor!!

Amish Macaroni Salad

I thought this was awesome! I also held back on sugar - 1 heaping tbsp was all. Didn't have 2C of M.Whip but filled in w/1c of Hellmans.A little over 1/4C of Apple vinegar. Blended the eggs (3) in with sauce and pureed it, added celery seed, garlic salt and 1 heaping tbsp Dijon. I think piccolini would be better than farfalle but couldn't find! DEFINATELY will do this again, and again!!

Absolutely the BEST Rich and Creamy Blue Cheese Dressing Ever!

I had pretty much given up on making a blue cheese dressing that I truely loved until I tried this. I didn't have buttermilk but knew to put a little lemon juice into 2% and let sit for a few minutes. Otherwise I followed the instructions, I doubled it. I grew up in Asheville and there was a drive in called Bucks that spoiled Ashevillians to blue cheese dressing - it was famous! This is right there!! On the spot great!!

German Red Cabbage

Chicken and Bacon Shish Kabobs

Wonderful!! Used water chestnuts instead of pineapple and marinated them with the mushrooms. Thinking sugar snap peas also...hummmm. Great w/rice pilaf!

Balsamic Dijon Dipping Sauce

Left out the sugar and added fresh rosemary and oregano. It is truely a great dipping sauce. I think next time I will emulsify a little olive oil to help thicken it up. Using it as a marinade on pork ribs as we speak. Reminds me of pork pinchitos we bought from vendors on the street in Spain!

Mushrooms in White Wine Sauce

I've been making this low carb staple for years using sherry and a little sour cream. It's wonderful alone, on a baked potato and once I broiled it with guyere cheese on the top. Very versatile. I can't imagine anyone calling it 'rich', I don't use corn starch though,maybe that's why some called it rich.

Creamy Cranberry Salad

This is wonderful. I used canned whole cranberries so I could skip the sugar/pan thing. Next time I will use a red delicious apple; I used a granny smith and it was a little too tart. My mother used to make something like this, and it really brought back good memories.

Broccoli with Lemon Butter Sauce

I take fresh broccoli, steam it in the microwave for 3 minutes and let sit in the m'wave after for about 3 minutes. Then I add 1 tbsp real butter, sea salt and 1-2 tbsp lemon juice and m'wave another 1 minute, let sit for 1 minute or until the meat is done. Granddaughter loves it! Bounce it around a little to coat. One dish, simple!

Pat's Mushroom Saute

This is good. Never thought about the oregano or vinegar. When we had a RV I used to put mushrooms in a container with butter salt and a splash of A1 in the microwave for 3 minutes and serve over steak. It tasted about the same.

Burrito Pie

This was great w/a few changes; put chopped iceburg on top; used rinsed blackbeans instead, they come seasoned,I added more cumin and put the boat motor on them a second to cream them (less fat & cal). I also used whole wheat tortillas the second time and no one could tell the difference w/ + seasoning. I used PAM and crisped them a little in a huge skillet before stacking. Such a great slumber party dinner for the granddaughter!!
