Butternut Squash Supreme

I used one average sized squash and cut the rest of the ingredients in half. Four healthy servings. It was really amazing. One change is I sauteed the onions first. Also, this was on accident, I mixed the crackers into the mash. So I just used extra cracker crumbs on top. Husband loved it, and he can be pretty picky.

Broccoli Rice Casserole

I really love this recipe. I add a pound of boiled, pulled chicken, and use 2 cans of cream of chicken and 1 can of cream of celery, mixing with milk instead of water. Also use fresh brocolli rather than frozen, but I don't precook it. I chop it up very fine. Then saute the onion and celery in some garlic olive oil instead of butter. It makes for a lovely entree casserole rather than a side dish.

Awesome and Easy Creamy Corn Casserole

I made this as stated, except added some finely chopped jalapeno and red bell pepper and some sliced green onion. I also used 1 can of cream corn and one bag of frozen sweet corn. I think next time I'll use two bags of frozen corn and add in a block of cream cheese in place of the creamed corn as I don't like using canned vegetables. Made it for a family dinner and everyone enjoyed.

Apple Crisp IV

I used 2 lbs. of fresh rhubarb in place of the apples and used a bunch of extra cinnamon per my family's preference. No other changes. Made it quickly for company and everyone enjoyed it. I covered the pan with foil for last half of baking for fear of crisp getting overly brown. The bottom "crust" was wonderful for the rhubarb as it tends to get watery when baked. Next time I may add some apples or strawberries in with the rhubarb.

Broccoli Salad IV

This was great. I used Mayo and Splenda instead of Miracle Whip and sugar as some other reviews suggested. I also substituted the slivered almonds in place of the sunflower seeds for personal taste. My husband and I both thought it was delicious. Will be making again.

Green Chile Frittata

Just made this for dinner. Cut recipe in half & used to 9x9 pan. I put a layer of cubed ham & sauteed onion on bottom of pan then poured egg mixture over the top. Much easier than a quiche. Loved it.

Dominican Style Oatmeal

I use steel cut oats. Just simmer on low for about 15 minutes. I also use Splenda Brown sugar in place of the white sugar & add apples & raisins. Healthy and so good.

Cheesy Ham and Hash Brown Casserole

This was a wonderful recipe. I honestly thought just reading it, it sounded kind of bland and probably would not have even tried it were it not for the reviews. So glad I tried it. I used "Simply Potatoes", refrigerated hash browns rather than frozen. I used the Southwest style with some peppers and onions in it. I doubled the ham as I thought only 8 oz of ham for a 9x13 pan was kinda slim. Only other change was I baked for 45 minutes before adding the Parmesan. Had I put it on before baking, it would have burnt to a crisp. 15 minutes in the oven is plenty for the Parmesan.

Colleen's Slow Cooker Jambalaya

I made this on the stove top instead of crock pot and it was delicious. I used crushed tomatoes instead of diced by mistake, but worked out great. I add a box of Zataran's Jambalaya rice into it at the end which adds extra spice and it is wonderful. Made this for friends who absolutely loved it as well. Will definately make again. A bit time consuming with all the prep work but well worth it. Not sure I will try it in the crock pot, may just stick to making it on the stove.

Restaurant-Style Potato Salad

Perfect. Thank you. I've had a hard time making a potato salad that my family liked. This was easy and perfect. I also added in two hard boiled eggs, slicing the whites and mashing the yolks into the dressing. Simple and delicious.

Tangy Grilled Pork Tenderloin

Very good. Big hit with company. It took much longer to cook than recipe stated on grill, but I cooked on very low heat, and basted with remaining marinade.
