About this Cook
I was born and raised in St.Croix, USVI, went to college in Puerto Rico, got married there and stayed. I really like it here and feel like I have lived here all my life. I took my first cooking lessons when I was 15 yrs. at the local university in St.Croix, It was for 6 weeks but I learned so much and it has helped me to be successful in the kitchen today.
My favorite things to cook
I love to bake! I bake fresh bread at least once every two weeks. I also like making Mexican dishes, pasta and healthy dishes.
My favorite family cooking traditions
My family used to cook big Thanksgiving dinners but I didn't carry on the tradition as it was just my husband and I for many years until our first child was born but I sometimes organize a nice breakfast at church to remember the good times we used to have as a family on that occasion.
My cooking triumphs
The first time I made bread it was such a success I called the neighbor to see what I had made. I went on to sell bread with my husband for like 6 months and many people that see us today always tell us that our bread was the best they have had and beg us to sell bread again.
My cooking tragedies
The first time I cooked for my husband (then boyfriend) I prepared it by my cousin's house. He was coming over to eat with a roommate. I was so nervous I kept checking and turning the rice and it came out mushy and then it took on a smoked taste. I wanted so bad to make a good impression, so I was embarrassed but no one said a thing about it.

Vegan Mac and No Cheese
Pretty good basic recipe. I used a couple of squeezes of key lime instead of the lemon as those are hard to find here. I used artichoke elbow macaroni. I also used like 1/4 of an onion instead of a whole medium size. I added zucchini and red sweet peppers.

Wheat Crackers
Excellent base crackers, I made with all freshly ground white whole wheat flour except for 1/2 cup I substituted for oat flour. You can make oat flour by whizzing the oats in your blender. I used 1 tsp salt, 1/2 cup vegetable oil and less than the 1 cup water. I also added flax and sesame. Watch out out for burning and you may have to remove the outer parts of the crackers from the oven first before the middle is done. They taste really good with the whole grain flour.

Pumpkin Pecan Pancakes
These pancakes were really good. I added a bit more almond milk. Instead of the ww pastry flour I used half freshly ground white wheat flour and half kamut flour. I also used fresh pureed pumpkin and less vanilla. I used half the recommended sugar and used turbinado sugar instead of white sugar added a bit of stevia. I chopped the pecan in a small food processor. They tasted really good and were filling. My husband and toddler liked them a lot.
